Ingredients

For the cake:

all-purpose flour, plus 2 tablespoons for the pan

packed light or dark brown sugar

milk or alternative milk

canola oil, or 12 tablespoons (1 1/2 sticks) unsalted butter, melted and cooled

tart baking apples (about 3 medium), such as Granny Smith or Honeycrisp, peeled, cored, and chopped into 1/2-inch pieces

For the glaze:

cream cheese, at room temperature

milk or alternative milk

chopped pecans or walnuts, toasted (optional)

Instructions

Make the cake:

Arrange a rack in the middle of the oven and heat the oven to 350°F. Generously coat a 12-cup Bundt pan with 1 tablespoon butter. Dust with the 2 tablespoons of flour and tap out any excess; set aside.

Place the remaining 3 cups flour, granulated sugar, brown sugar, cinnamon, baking powder, and salt in a large bowl or in the bowl of a stand mixer fitted with the paddle attachment and beat or whisk to combine. Add the milk, oil or butter, eggs, and vanilla and beat with an electric hand mixer or in the stand mixer on medium speed until smooth, 1 to 1 1/2 minutes. Fold in the apples with a rubber spatula.

Pour the batter into the prepared pan. Bake until the cake is lightly browned, springs back when lightly pressed with a finger, and a tester inserted in the center comes out clean, 45 to 50 minutes.

Cool on a wire rack for 15 minutes. Run a knife around the pan to loosen the cake and flip it out of the pan onto a wire rack. Cool completely before glazing.

Make the glaze:

Place the cream cheese in a stand mixer fitted with the paddle attachment. (Alternatively, use an electric hand mixer, small food processor, or sturdy whisk.) Beat on medium speed until light and fluffy, 1 to 2 minutes. Reduce speed to low, gradually add the powdered sugar, and beat until combined, about 1 minute. Add the milk and vanilla and mix on low speed until smooth and creamy, about 15 seconds.

Pour the glaze over the cooled cake, making sure that the glaze drips down the sides of the cake. Sprinkle with the chopped walnuts or pecans, if using.

Recipe Notes

Storage: The glazed cake can be wrapped with plastic wrap after the glaze has set. Refrigerate for up to 5 days. Let come to room temperature before serving.

This recipe came from my grandma. It’s one of those recipes that has been in the family for years and years but no one knows where it originated from. It was my grandfather’s favorite cake, because it’s not too sweet, and not covered in chocolate. It has a delicious cinnamon flavor and large chunks of apples throughout the cake.

How To Make This Apple Cake

  6. Mix well to combine all the ingredients. At this point, it may look like there is not enough batter based on how many apples there are. Don’t stress! The batter will rise and create a beautiful crumb in the cake.
  7. Grease and flour a 9×13 inch pan. Pour the cake into the pan and spread it out so the batter is evenly distributed throughout the pan.
  8. Place the pan in the oven for 45 minutes or until a toothpick is inserted and comes out clean.
  9. Allow the cake to slightly cool before cutting into it so the cake holds its shape.

The Best Apples To Use

You’ll want to use sweet, firm apples. Fuji, Gala, or Honeycrisp are my favorite. We just went apple picking, so we have a bunch of Honeycrisp apples in my kitchen to use. You can even do a mixture of apples, two Gala and one Honeycrisp would be really great! If you have more tart apples like Granny Smith, I’d add more sugar to offset the tartness of the apples.

How To Serve This Apple Cake

  • This cake is perfect with just a sprinkling of powdered sugar.
  • Add a scoop of vanilla ice cream for a twist on an apple pie ala mode. You can’t go wrong adding vanilla ice cream to anything!
  • To add a glaze, mix together 1 cup of powdered sugar with 2 tablespoons of milk and 1 teaspoon of cinnamon. That will give you a beautiful, light glaze for the cake.
  • There’s always homemade whipped cream! Add 1 cup of whipping cream to the bowl of a stand mixer and add 2 tablespoons of powdered sugar. Whip the heck out of it until it forms stiff peaks. The easiest whipped cream you could make!

Tips and Tricks

  • When you are mixing the cake, it may look like there is not enough batter or that the batter is too thick, but don’t worry! The amount of baking powder in this recipe gives it a nice rise, so the batter will surround the cake and become beautifully moist.
  • Make sure to grease and flour the pan well. There’s a lot of sugar in the apples and the batter that could easily stick if the pan is not greased properly.
  • This cake can be made in a Bundt pan or a spring form pan. This makes a lot of batter, so add a baking sheet to the bottom of the cake pan when baking to make sure there is no overflow of the batter while it bakes.

Oh yum! I could almost smell it from the photos 😀 I bet they taste really good.

It looks great in the photos! I might have to try this when I get done with the Whole30. We have an abundance of apples right now.

This was a big fat flop for me! My apples were large, not medium, but since the recipe stated extra apples were added I figured it’d be ok. Recipe doesn’t say anything about increased baking time for extra apples, and even after keeping this cake in the oven for an extra half hour, it’s still wet and sticky on top and overall just completely inedible. So disappointing!

Sorry to hear this recipe didn’t work out for you. I don’t include increasing the time to bake because when we bake it we normally bake it for 55 minutes. Again, I’m sorry this recipe didn’t work out for you.

I was looking for a simple, quick recipe to toss together and thought I would try this. I only had one apple – not huge but bigger than medium lol – so I decided to just make a half recipe. I can’t believe that something that is basically toss, stir and bake can come out so good! I just topped it with a bit of a caramel glaze (just used some caramel syrup to stir into the powdered sugar) and it was perfect! Next time I’ll make sure I have enough apples on hand to make a full batch. This is going to disappear fast! lol

Delicious cake! I don’t like using oil in cake so I substituted 1/2 cup of applesauce and two very ripe bananas. I had to bake about 10 minutes extra.
