Classic apple pie with cinnamon cream
This classic apple pie recipe with home-made shortcrust pastry, a beautiful lattice top and cinnamon-scented whipped cream tasted like home in every bite.
I have this idea of how my future will be. I’ll be in my 50’s/60’s, my kids will be grown up living happy, successful lives of their own and I will be travelling. A lot. But then my kids will phone me and say “Mom, I’m dying for your (enter iconic mom dish here). Come home.” And I will, and I will cook it for them and they will look at me with complete adoration in their eyes.
And often, people will laugh at me when I tell them about this little fantasy of mine. But then the other day, Aidan comes to me and says “Mamma, please please please can you make me apple pie again. Your apple pie is the best.” And I knew, right then, that I am not being unrealistic. Because let’s face it, we all have that one (or more) dish that our moms just make the best. Even my mom, not the most eager of cooks, had dishes that she just kicked ass with. Her chicken-fried steak, chicken liver pate and marshmallow fridge tart are to this day some of the most delicious things I have ever eaten.
And so, I made an apple pie. And the whole time I was busy making the pastry, slicing the apples, whipping the cream, Aidan popped his head around the corner, asking when I would be done. He also kept telling me that this was the prettiest pie and he just couldn’t wrap his head around the lattice top. And to be honest, it takes a second or two to figure it out but the reward is so much bigger than the amount of effort it takes to create this pretty topping.
My brother said that the pie didn’t even look real. “It looks like a cartoon pie!” And that’s all down the pretty lattice top. This is not only an aesthetic thing though, the lattice top also allows the steam to escape efficiently, allowing your pie filling to become jammy and the pastry to stay crisp. In fact, I didn’t even blind-bake the pastry before hand. I simply chilled it efficiently before filling with the apples and baking.
The end result was this beautiful pie with its golden, crisp pastry and jammy apple-y interior. Serve with a dollop of soft, cinnamon-scented whipped cream and you have home in every bite.
How do you make a homemade apple pie?
Start by making the pastry by pulsing butter, flour and sugar together in a food processor then add ice water and egg until the dough comes together. Chill in the fridge before rolling out and pressing into a pie plate. The filling is made with granny smith apples. Peel and slice the apples finely then mix with cinnamon, sugar and corn starch. The corn starch helps the apple juice thicken up so you don’t have a watery pie at the end. Top with lattice crust then bake until golden brown and bubbling. Remember to allow the pie to cool down before slicing as this will help the sliced pie keep its shape.
What are best apples for apple pie?
I prefer apples that have good flavor and will keep their shape once cooked. Granny Smith apples hit both those boxes but I’ve also had success using a few different varieties in one pie. Pink lady apples are also really delicious in pies.
Do you have to peel apples for apple pie?
No, you don’t have to. It results in a “smoother” eating experience and is more classic but you can definitely leave the skin on. Just make sure to slice the apples finely.

This Cinnamon Roll Apple Pie is a unique take on a classic apple pie. Made with a cinnamon roll inspired crust it looks as delicious as it tastes!
I’ve been so excited to make this Cinnamon Roll Apple Pie ever since I saw the idea for its unique crust on Pinterest. And don’t worry. For those of you who don’t (want to) make pie crust, this recipe calls for a store-bought one.
Let me introduce you to this Cinnamon Roll Apple Pie!
What makes this crust extra special is that it looks like mini-cinnamon rolls lining the pie pan. To create this look (which also adds extra cinnamon-sugar flavor), you sprinkle an unrolled refrigerated pie crust with cinnamon and sugar. Then you roll it up and slice it into what looks like mini-cinnamon rolls.
How to Make a Cinnamon Roll Pie Crust:
Next, you simply press the little rolls into a classic pie pan. (You can use any type of pie pan here, but the clear glass will show off the beautiful design of the crust.) Pretty neat, right?
For the filling, I used a mix of Granny Smith and Honeycrisp apples, two of my favorites.
Finally, the whole pie gets covered in this fantastic crumb topping.
It will seem like a lot when you’re putting it on, but just keep piling it high. As they bake, apple pies tend to flatten, so the higher the better.
Slide the pie in the oven and bake it for an hour. For a final “cinnamon roll” touch, a swirl of cinnamon icing goes over the top. Perfection. Naturally, I served up mine with a big scoop of vanilla ice cream. If you are up to making your own, here is a recipe for vanilla frozen custard.
I forgot to take a picture while I was taste testing this pie, (I got distracted by the deliciousness.), but I can attest that seeing the cinnamon swirls in the crust as you’re digging in is pure bliss. It’s also one of those unexpected things that makes this dish really memorable.
While the crust does take a few extra minutes, it’s totally worth it. I think it also would be fun to try with a pumpkin or pecan pie!

Apple Crepes With Cinnamon (Vegan, Gluten-Free)

These apple crepes with cinnamon are simply perfect for the holiday season but can be enjoyed all year round. The recipe is vegan (dairy-free, egg-free), gluten-free, and easy to make. They taste best with a homemade caramel sauce.
Flavorful Apple Cinnamon Crepes
The holiday season is close and what I love most about it, is the amazing scent of spices in my kitchen when I bake a dessert. Cinnamon is probably my favorite spice and in combination with apples and coconut sugar, you can create a delicious apple pie filling!
I always get into a festive mood when I make these tasty apple cinnamon crepes! For me, they are seriously a must-have breakfast or dessert for fall and winter. My parents are from the Czech Republic, and we call them “palačinky” (palacinky) but they are also popular in Croatia (palacinke) and many other Slavic countries.
If you are tired of eating PB & Jelly pancakes and want to try something new, then give these dessert crepes a try.
The Ingredients
I made vegan crepes that are furthermore gluten-free. Here are the ingredients that you will need:
- Gluten-Free Flour: I used a combination of oat flour, rice flour, and cornstarch. However, a gluten-free 1:1 all-purpose flour blend, regular wheat flour, or spelt flour (if you aren’t gluten-free) instead of oat flour and rice flour should be fine too. Buckwheat flour and quinoa flour might work great as well! You can use arrowroot flour instead of cornstarch.
- Sweetener: Use coconut sugar, organic brown sugar, or cane sugar. They all add a lovely toffee-flavor.
- Ground flax seeds: It’s fine to use ground chia seeds.
- Plant-based milk: I like using canned lite coconut milk (or regular canned coconut milk thinned with water) as it will make the crepes more flavorful. If you use boxed almond milk, oat milk, or any other dairy-free milk that is low-fat, I would suggest adding 3 tbsp oil to the batter, otherwise, the gluten-free crepes might stick to the pan.
- Banana: You can use applesauce instead of banana.
- Lemon juice: Or use lime juice.
- Vanilla extract: Or use vanilla bean paste.
- Apples: You can use your favorite baking/cooking apples. Some examples, Granny Smith, Honeycrisp, Jonathon, Gala, or Braeburn.
- Baking powder
- Oil for frying

The Step-By-Step Instructions
Below are the steps on how to make apple crepes with process photos. You can also watch the video! The printable recipe is below in the recipe card.
Step 1: Add all dry ingredients for the crepes into a bowl and stir with a whisk.
Step 2: Process the wet ingredients (except the oil) in a food processor or blender. If using applesauce, you can mix them in a bowl.
Step 3: Pour wet into dry ingredients and stir with a whisk to combine.
Step 4: Let the batter rest for a few minutes. Heat a little oil in a small/medium-sized non-stick pan.
Step 5: Pour 1/4 cup of the batter into the skillet and swirl it around to coat the pan evenly. Cook the crepe for about 2-4 minutes or until you can easily lift a side of the crepe (please don’t try to flip it too early). After you flipped the crepe, cook for a further 1-2 minutes.
Note: After a while, the batter will thicken, so you might need to add more milk, up to 50 ml. Continue until you have no batter left.
Step 6: To make the apple pie filling, simply add all ingredients to a skillet or saucepan and stir (without heat). Then turn on the heat and bring the mixture to a boil. Let simmer for a few minutes over low/medium heat.
Step 7: Add a few tsp of the filling onto each crepe, roll it up, sprinkle with granulated sugar (of choice), and cinnamon (this step is optional). I like to add a drizzle of caramel sauce. Enjoy!
Apple Crepe Filling
The filling reminds me of an apple pie which is one of my favorite pies! I sometimes like adding raisins, rum extract, and vanilla extract too. Pumpkin spice or allspice is also a nice addition. You can peel the apples (like I did) or leave the peel on if you prefer.
It would be possible to make the apple crepe filling sugar-free, by using a low-carb (keto) sweetener like Erythritol. But then it won’t have this yummy toffee-flavor.
Recipe Notes
- I recommend using a non-stick pan since you will need very little oil to cook the vegan crepes.
- Cook them at medium heat. Low won’t make them brown, and high heat will brown the edges too much but won’t cook the inside properly.
- You can experiment with other flours (as mentioned above), however, please note that the recipe turned out perfectly with the flours that I used.
- Use two pans to speed up the cooking process.
- Stack the cooked crepes and cover them with a kitchen towel to keep them warm and prevent them from drying out.
Storing Instructions
To make in advance: You can make the crepes and the apple filling in advance and store both separately covered in the fridge for up to 2 days.
To reheat the vegan crepes: Reheat each crepe in a pan with a lid over medium heat for 20-30 seconds. They will dry out in the fridge and become a little hard, but reheating with a lid will make them softer again.
Caramel Sauce
I love to eat these apple cinnamon crepes with a drizzle of homemade caramel sauce which literally contains just 3 ingredients! They are coconut sugar (you can use organic cane sugar or brown sugar), water, and nut butter of choice. I actually used sunflower seed butter (Sunbutter) but any nut butter like peanut butter will work. Check the recipe notes to find out how I made it.
