Apple and plum cake with rum caramel sauce

This wicked cake makes the most of autumn’s fruit. Serve with lashings of the rum caramel sauce.

Ingredients
For the apple and plum cake
- 125g/4oz unsalted butter, softened, plus extra for greasing
- 200g/7oz golden caster sugar
- 1 free-range egg, lightly beaten
- 150g/5oz plain flour
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp grated nutmeg
- 100g/3½oz pecans, roughly chopped
- 3 medium apples (mix of granny smith and golden delicious), peeled, cored, chopped into small pieces
- 5 plums, stone removed, chopped into small pieces
- 2 tbsp finely chopped stem ginger
For the rum caramel sauce
- 200g/7oz caster sugar
- 250ml/8floz whipping cream
- 1-2 tbsp dark rum
- 1 tsp vanilla essence
Method
For the apple and plum cake, preheat the oven to 180C/350F/Gas 4. Grease and line a 23cm/9in deep, round cake tin.
Beat the butter and sugar together in a bowl until light and fluffy. Add the egg and two tablespoons of flour and mix until well combined.
Beat in the remaining flour, salt, baking soda, cinnamon and nutmeg and until just combined.
Stir in the remaining ingredients.
Pour the mixture into the cake tin and bake for 35-45 minutes, or until golden-brown and springy to the touch. Remove the pudding from the oven and set aside to cool slightly.
Meanwhile, for the rum caramel sauce, heat the sugar in a saucepan for 4-5 minutes, or until it becomes caramel. Remove the pan from the heat and set aside to cool slightly.
Heat the cream in a saucepan set over a medium heat, then whisk it into the caramel to form a smooth sauce. Stir in the vanilla and add the rum, to taste.
To serve, cut the pudding into wedges and serve with the rum caramel sauce.

Apple and plum cake recipe
A moist, fruity sponge cake, packed with sweet apples and plums and drizzled in vanilla syrup.
I like to use Braeburn apples, however you can use any sweet or tart apple you prefer. Do not slice the fruit too thin or it will burn before the cake cooks.

Step-by-step
- Preheat the oven to 170°C/340°F/gas mark 3½.
- Slice the apples into wedges, removing the core. There should be approximately 8-12 wedges per apple, depending on size. Slice the plums into 4-6 wedges depending on size and set aside.
- Pre-line a 10inch square cake tin. Cream together the butter and sugar, and then slowly add the eggs. Add the flour, mix until combined before adding the milk. Spoon into the cake tin and smooth evenly.
- Place the apples on top of the cake mix, this can be in a particular design or just random, then the plums on top. Bake for 25-35 minutes or until golden and springy to the touch. Allow to cool. Meanwhile make the vanilla syrup by boiling all of the ingredients together, and brush over the cake to finish.

Rustic Apple Plum Cake
I usually make a similar cake with apples and cinnamon, but I was gifted a huge box of organic apples and plums recently. I could not resist tweaking my recipe to include both fruits, and trying nutmeg instead of cinnamon. This fun experiment made such an amazing cake, I just have to share the recipe with you!
In my recipe, I use 4 tablespoons of butter and 4 tablespoons of applesauce. You can play with these a bit if you want it more or less buttery, just make sure they equal 8 tablespoons total. 🙂

- Preheat the oven to 375 F. Lightly grease an 8-inch square pan (or equivalent) and line with parchment paper. In a bowl, whisk together flour, baking powder, and salt.

Delicious Plum or Apple Cake (or whatever fruit you have!)
Make this quick and easy snack/dessert cake using your favourite fruit. It is delicious with plums or apples but you could also use apricots, raspberries, or rhubarb!
One of my favourite fruits to bake with would have to be plums. We have a blood plum tree that treats us to sweet juicy plums with a gorgeous dark red flesh. Come summer when it’s really too hot to be baking I’ll still be in the kitchen whipping up some yummy plum treats. My favourites are these Plum Muffins, this wonderful Plum Torte, and of course this delicious Plum Crumble.
Last year the tree was so loaded with fruit we were struggling to keep up. There are only so many you can eat fresh off the tree and lots of plum desserts are bad for the waistline! So I decided to try freezing some, and I was so glad I did. I froze about 3kg of chopped plums which has meant that all through winter we’ve been enjoying our favourite plum recipes!
When I saw this apple slice recipe I immediately thought of the plums in the freezer. However I have made a couple of adjustments to the recipe so I have called my version a cake rather than a slice.
Just as I’d hoped the plums turned out wonderful with this cake. The sweetness of the cake and the tartness of the plums just seem to work so well! I can’t wait to try this cake with fresh plums in summer!
I’ve made this recipe a few times now and I’m pretty sure this cake would be great with any fruit. Tinned apple works just fine, I used a 400g tin of pink lady apples and the cake was delightful! The original slice recipe used raw apples, and I am sure that would also work just fine with this recipe.
I’m keen to try it with apricots, I think either tinned or fresh, would work well. As would summer berries like raspberries or blueberries. Maybe even rhubarb or peaches – the possibilities are endless actually!
This recipe is great as a snack cake but it can also double as a dessert cake. Try adding some whipped cream to make it feel really indulgent! Or if you warm it up in the microwave for a few seconds and then top it with a scoop of ice cream you’ll be in heaven! Trust me I know from experience!

Ingredients
- 200 g of butter at room temperature and a little more for the mold
- 330 g flour
- 2 apples
- 1 organic lemon (skin and juice)
- 1 teaspoon of ground cinnamon and a little more for the surface
- 30 g of cane sugar and a little more for the surface
- 100 g de azúcar blanquilla
- 1 tablespoon honey
- 3 eggs
- Sal Island
- The juice of 1 tangerine
- 1 envelope of yeast for Royal type sweets
Preparation
We preheat the oven to 180º. Grease a 24 cm plum cake mold with butter and flour. We booked.
Peel, core and thinly slice the apples. We put them in a bowl and pour the lemon juice, cinnamon and cane sugar over them. We booked.
We put the lemon peel and 30 g of flour in the glass. We program 30 seconds, speed 7.
We add the butter and the white sugar. We program 15 seconds, speed 4. We add the honey and the eggs and mix all during 30 seconds at speed 5.
Now add the rest of the flour (300 g), a pinch of salt and the tangerine juice. At this point we can also add the liquid from the bowl (lemon juice, sugar and cinnamon). We mix 10 seconds, speed 5.
Add the yeast and mix 30 seconds, speed 5.
We pour the mixture into the mold that we had prepared before. We put the apple slices on the surface, a little cane sugar and also cinnamon.
Bake at 180º for 50 minutes or 1 hour, it will depend on your oven. If we see that the apple can burn we cover the surface with a little greaseproof paper.
Notes
We can use a 28-centimeter mold taking into account that the baking time will be less: at 180º, about 40-45 minutes.
