You Can’t Stop With Just One of These Apple Cake Muffins!

When the aroma of Apple Coffee Cake Muffins wafts through my home, you can’t help but feel that warm, fuzzy feeling.

You know how there are some aromas that automatically make you feel comforted and at peace?

For me it’s those cinnamony aromas mixed with a hint of Fall spice that just gets me.

And in a muffin? Oh boy, sign me up!!

Homemade muffins are always a welcome treat in my home.

I try to avoid adding a crumble (also known as a streusel topping) unless I’m baking muffins for a celebration or to take to someone’s home but there are some muffins that are just incomplete without a crumble.

Before we get to the recipe I have to address the question- what does streusel mean? Is it the same as a crumb topping?

And the big one:

Streusel vs Strudel? The same thing?

If you’re looking for a simple streusel definition, it is the crumbly topping on top of a muffin or coffee cake.

This crumbly topping is commonly a combination of flour, butter, sugar, and cinnamon.

I also love to add nuts to my streusel or crumb toppings.

A streusel is not a strudel!

A strudel is a pastry treat.

A favorite of mine is an apple strudel- pastry sheets that blanket spiced apple slices. Yum!

An Easy Apple Coffee Cake Muffins Recipe

Now you can use your preference of apples in this recipe.

The yellow apples aren’t as sweet and add a slight tart taste to the mix, which we love.

Organic gala apples are also a great choice.

And while preparing the batter, remember not to mix the apples into the batter with a hand mixer or a stand mixer.

Gently fold in the apples with a spoon.

Another tip… pour the muffin batter three-fourths of the way, in the liner.

This is to allow the muffin enough space to rise, even after the crumble is added to the top.

Apple Muffins (Cake)

This blog is for crochet mostly. But I also love baking. So I decided to share with you a few of my favorite recipes.

I am not a professional baker. I am just typing these recipes the way my grandma and my mom have written them in their notebooks. I hope you like them.

The first recipe comes from one of my grandma’s friends. I made this apple cake for the first time when I was a kid. My mom used to make it a lot too. It is truly a family favorite.

The only thing I have changed is the amount of sugar. I only add 1/2 cup sugar so I can use the cake (or muffins) for breakfast. To me, they are sweet enough that way.

3/4 cup white sugar (I only add 1/2 cup)

1/2 cup vegetable oil

4 apples (medium size)*

2 tblsp cinnamon

2 cups flour (scoop with the measuring cup and level with a butter knife)

1 tsp baking soda

Optional: walnuts and/or dried cranberries

*You can use whatever apples you have. I have made these with just granny smith, or just fuji, golden delicious, or even a mix. The muffins always come out delicious.

  1. Heat oven to 350F and spray your muffin tin or cake pan with cooking spray.
  2. Beat eggs and sugar until white.
  3. In the meantime, grade the apples.
  4. Add the oil and graded apples.
  5. Add the cinnamon, flour, and soda and beat until well mixed.
  6. Add chopped walnuts and/or cranberries.
  7. Bake at 350F until a toothpick comes out clean. If you are making muffins, it takes about 15 minutes to bake.

NOTE: I have only made this recipe the way I have written it here. I don’t know if you can substitute the oil for something else, or the flour, etc. You can try different substitutions if you’d like, but I don’t know what would work and what wouldn’t.

Of course, pie is an easy answer, and don’t get me wrong – we LOVE pies here. But, this year, I wanted to try something other than pie for our holiday parties. Cakes and muffins are easy for holiday parties.

They both have apples in abundance so you will taste apples in each bite! Apple gets deliciously coated with cinnamon and they both are mildly sweet. Of course, I made one egg-free for Anouk and she somewhat liked it (my daughter is not that much into sweets).

How can you make an elderberry glaze?

This recipe makes a cup of icing.

  • 2 cups powdered sugar
  • 2–3 Tablespoons heavy cream
  • 1 teaspoon elderberry crystals mixed with 1/4 teaspoon (or less) water – this should form a thick paste.

Whisk the powdered sugar and 1-2 tablespoons heavy cream together adding little bit a time. Slowly add the elderberry crystal & water paste as needed. You can add more if you want a darker hue. I prefer thick icing to thin. Plus you can always thin it out with more heavy cream. If your icing has gotten thin, use more powdered sugar to thicken it.
