- Romaine lettuce (chopped)
- Apples (or pears)
- Dried cranberries
- Chopped walnuts (or pecans/almonds)
- Bacon (crisp and crumbled)
- Feta cheese (crumbled)
- Poppyseed salad dressing
- Balsamic Vinaigrette dressing
How To Make Apple Cranberry Walnut Green Chopped Salad:
When starting out grab your lettuce, apples, cranberries, walnuts, bacon, and feta cheese and combine them all in your large mixing bowl.
Next, you will combine the balsamic vinaigrette with the poppy seed dressing in your smaller bowl.
NOTE: Be sure you are using balsamic vinaigrette dressing NOT plain balsamic vinegar.
Drizzle this over your salad right before you serve it.

There’s a few components to make this Apple Salad – and it’s worth it! With candied walnuts or pecans, plumped cranberries, thinly sliced apple and leafy greens, this is a salad that’s worthy of festive gatherings.
This Apple Salad is tossed with a simple vinaigrette – because with all the fabulous textures and flavours going on here, we don’t want the dressing to steal the show!!
A SHOW-OFFY APPLE SALAD
There’s 3 types of salads in my world:
1. quick and easy salads for midweek meals;
2. giant meal salads; and
3. show-offy salads.
In my world, the definition of “show-offy salads” are those that require a bit more effort, reserved for gatherings, lunch with friends, and for family dinners where I’m sulking because everybody else “bagsed” the “fun” courses – starters, main and dessert, leaving me with “just” salad.
“You want me to bring salad? I’ll show you a salad!!” I fume silently to myself.
And thus, I embark on a mission to make a great salad. Tasty, pretty and interesting – but still fresh enough to be a side dish.
This Apple Salad with Walnuts and Cranberries is one such salad.
This recipe centres around apples, the crisp, juicy sweetness and pairing it with leafy greens and an assortment of other ingredients to create a salad that’s loaded with great textures.
Well, actually, just one apple. That’s all you need for this recipe. Once sliced thinly, one apple stretches quite far.
I like to use red apples for this, mainly for colour and also because I prefer the sweet with a bit of tart that is inherent with most varieties of red apples here in Australia. But feel free to use any apple you want!
HOW TO MAKE MY APPLE SALAD
I did say upfront that there’s a few components to this apple salad, and I think it’s worth it if you’re going all out! BUT you can absolutely simplify it – note the significant use of the words “optional step”in the following section:
Candied walnuts (or pecans or other nuts) – Super quick, 5 minutes on the stove for crunchy toffee coated nuts. This is an optional step for show-off purposes;
Plump cranberries – Just a 5 minute soak in hot water is all that’s required to transform shrivelled up dried cranberries (or any berries) into plump little balls that burst in your mouth when you bite into them. Again, optional!
Sliced apple drizzled with lemon to stop them from browning – optional if serving immediately;
Simple dressing made with vinegar, oil, mustard and sugar. Keep it simple to let everything else shine!
Leafy greens, onion for a fresh bite and the teeniest crumble of feta or goats cheese mainly for garnish.
As I always do out of interest, I did a quick search on the internet to see how others do Apple Salad. I was somewhat bemused to see an astonishing array of mayo-laden salads made with apple.
Suffice to say, this is pretty much on the opposite end of the spectrum. I’d describe this salad as fresh and bright with the zingy dressing, the crisp sweet juiciness of apple, and the leafy greens, with added pops of flavour and textures from the sweet-tart (plumped!) cranberries and the crunch of the candied walnuts.

How To Make Cranberry Walnut Salad
Start by washing and prepping your apples.
Then toss them in the bowl along with the sliced celery.
Pour in the cranberry and mix well.
You will refrigerate the salad, and then right before you go to serve, toss in the walnuts and stir.
It will give a nice crunch to the salad.
Can I Use A Different Type Of Apple
So I reached for a Granny Smith apple because I found it balanced out the flavors nicely in this salad. The tart gives tons of flavor.
You can use other varieties of apples.
But, if you do reach for another variety just know it will adjust the flavor a bit.
I would recommend doing a crisper apple so it holds that crisp texture when you bite into the salad.
Can I Use Homemade Cranberry Salad
If you have leftover cranberry salad, you are more than welcome to use it to replace canned cranberry.
I do recommend that you use whole berry cranberry instead of the jelly type.
Is This Cran-Apple Salad Like A Waldorf Salad
You might feel like this cran-apple salad is similar to a Waldorf salad but it lacks some of the main ingredients you get with the classic Waldorf.
Grapes, cranberry, celery, dried cranberries, raisins, and more are what are in a Waldorf.
This cran-apple salad is a bit lighter and of course, uses fewer ingredients.
Can You Freeze Leftover Cranberry Salad
Due to the fruit in this along with the celery, you will find the texture of the cranberry salad will become soggy in texture.
I recommend not freezing this salad.
You are more than welcome to reduce the salad by half if you feel you can’t eat it all.
Or if you are serving a larger crowd you can easily double this recipe.

I love every bit about Thanksgiving. The family, the smells, Macy’s Thanksgiving Day parade and most especially indulging in the carb overload! As with everything, any good Thanksgiving dinner has a good balance between those dreamy carbs and some lighter choices. This delicious Apple Cranberry Walnut Salad is the perfect balance for your Thanksgiving meal!
This salad looks beautiful and is so easy to throw together. The combination of the feta cheese and the sweet apple and sour cranberry is amazing. The walnuts add just the right amount of crunch and flavor. But that homemade apple cider vinaigrette is really what ties the whole salad together. It’s SO good.
I like to use a sweet apple in this recipe like fuji or gala, but a tart granny smith apple would also be great in this salad!
As it’s written, this recipe feeds six people but it can easily be doubled or tripled to bring to a holiday family gathering.
You can mix up the greens and salad toppings ahead of time as long as you toss your apple slices with a bit of lemon juice to keep them from going brown. You can mix up the dressing ahead of time too, but wait to pour it onto the salad until you are ready to eat.
Make this beautiful salad for Thanksgiving, Christmas, or any regular day. You could even add chicken to make this salad into a lunch or light dinner!

- 8 cups of spring mix pre-washed lettuce (you could also use spinach or a mix of the two!)

- 1 cup chopped walnuts
- ½ cup crumbled feta cheese
- ½ cup dried cranberries
- ¼ cup extra virgin olive oil
- ¼ cup honey
- 3 tbsp. apple cider vinegar
- 1 tbsp. Dijon mustard
- ½ tsp. salt
- ½ tsp. pepper
Directions
1. In a medium bowl, whisk together the olive oil, honey, apple cider vinegar, Dijon mustard, salt, and pepper until well combined. Set aside.
2. Peel and thinly slice both the apples. If not serving immediately, toss the apples in a bit of lemon juice to prevent browning.
