Classic apple crumble
With a sprinkling of lemon zest

Ingredients
- 1.5 kg mixed apples , (I like to use half Bramley)
- 150 g golden caster sugar
- 1 lemon
- 50 g unsalted butter , (cold)
- 100 g plain flour

Method
- Preheat the oven to 200°C/400°F/gas 6.
- Peel and core the apples, then quarter and chop into 3cm chunks.
- Place in a saucepan on a medium heat with 100g of sugar and a few fine gratings of lemon zest.
- Pop the lid on and cook for 5 minutes, or until the apples have softened. Remove the heat and leave to cool a little.
- Meanwhile, cube the butter and place in a mixing bowl with the flour. Rub together with your fingertips until it resembles breadcrumbs, then scrunch in the remaining sugar to add a little texture.
- Transfer the apples to a 25cm x 30cm baking dish and sprinkle over the crumble topping.
- Bake in the oven for 25 to 30 minutes, or until golden and bubbling. Delicious served with vanilla custard.
EASY SWAPS
– Ripe pears are fantastic in place of the apples. Simply peel, core and cut into chunks.
– If you don’t have a lemon to hand, use orange or lime zest instead.
– You could add rolled oats for a lovely golden topping. Check out my School Dinners recipe for some inspiration.
TO SERVE
– Enjoy with custard, a dollop of low-fat Greek-style yoghurt, a scoop of ice cream, or 1 tablespoon of low-fat crème fraîche with a grating of lemon zest.

Классический яблочный крамбл от Джейми Оливера
1,5 кг яблок разных сортов (половина — сорт Брамли)
150 г сахара
1 лимон
50 г охдажденного сливочного масла
100 г муки
Разогреть духовку до 200* C. Очистить яблоки от кожуры и сердцевины, затем нарезать их ломтиками по 3 см.
Поместить их в сковороду на средний огонь, всыпать 100 г сахара, натереть цедру лимона.
Накрыть крышкой и тушить яблоки 5 минут, пока они не станут мягкими. Затем снять с огня и остудить.
Тем временем нарезать масло кубиками и поместить в миску с мукой, добавить 50 г сахара.
Размять масло руками, пока комки не превратятся в крошку.
Переложить яблоки в форму для выпечки размером 25 х 30 см и посыпать сверху крошкой.
Выпекать в духовке при 200*С от 25 до 30 минут или до золотистого цвета.
Крамбл будет вкуснее с ванильным кремом или мороженым.

- For the crumble
- 225 g plain flour
- 90 g caster sugar
- 1 pinch salt
- 1 teaspoon powdered ginger
- 115 g unsalted butter
- For the filling
- 100 g sugar
- 100 ml water
- 4 nice ripe pears , peeled, cored and cut into chunks
- 5 pieces stem ginger in syrup , finely chopped
- 1 lime , juice and zest of, plus extra for serving

Method
- You can’t go wrong with an old-fashioned crumble. Everyone loves it, and it’s lovely and easy!
- Preheat your oven to 200ºC/400ºF/gas 6.
- Sift the flour into a bowl and add the sugar, salt and ginger.
- Cut the cold butter into chunks and rub it into the flour mix with your hands until you get a mixture that looks a bit like fine breadcrumbs. This is the crumble topping.
- To make the filling, boil the water and sugar together, then carefully drop in the pear chunks and simmer gently for a couple of minutes.
- Add the chopped ginger and the lime zest and juice to the pan and stir. Spoon the mixture into one large ovenproof dish or four small ones.
- Sprinkle the crumble topping over the top of the fruit, piling it high in the middle of the dish and leaving space at the edge for the caramel to bubble up.
- Bake in the preheated oven for 25 to 30 minutes until the pears are cooked and bubbling and the crumble is golden on top. Serve with custard or a dollop of crème fraîche with lime zest grated over, if you like.
- Tip: This crumble will work well with apples instead, if you prefer.

100g | dried apple |
200g | self-raising flour |
100g | unsalted butter (cold) |

Method
Preheat the oven to 200ºC/400ºF/gas 6. Line two trays with greaseproof paper and rub with olive oil. Whiz the apple in a food processor until finely chopped, then add the flour, cubed butter, sugar and a pinch of sea salt. Blitz to fine crumbs for 1 minute, then remove 3 tablespoons of the mix and set aside. Pulse in the egg until combined, stopping to scrape down the sides, if needed.
Divide into 24 pieces, roll into balls, then press down lightly into 4cm rounds, lining them up on the trays as you go. Sprinkle over the reserved mix, lightly pressing it into the cookies. Bake for 8 to 10 minutes, or until lightly golden. Leave to cool slightly, then transfer to a wire cooling rack. Yum!
