This is the easiest apple crumble recipe and an all-time favourite quick and easy dessert.

Each serving provides 618 kcal, 6g protein, 83g carbohydrates (of which 43g sugars), 28.5g fat (of which 18g saturates), 3.5g fibre and 0.21g salt.

Ingredients

For the crumble

  • 300g/10½oz plain flour, sieved
  • pinch of salt
  • 175g/6oz brown sugar
  • 200g/7oz unsalted butter at room temperature, cubed, plus a little for greasing

For the filling

  • 450g/1lb apples, peeled, cored and cut into 1cm/½in pieces
  • 50g/2oz brown sugar
  • 1 tbsp plain flour
  • 1 pinch ground cinnamon

Method

Preheat the oven to 180C/350F/Gas 4.

Place the flour, salt and sugar in a large bowl and mix well. Taking a few cubes of butter at a time rub into the flour mixture. Keep rubbing until the mixture resembles breadcrumbs.

Place the fruit in a large bowl and sprinkle over the sugar, flour and cinnamon. Stir well being careful not to break up the fruit.

Butter a 24cm/9in ovenproof dish. Spoon the fruit mixture into the bottom, then sprinkle the crumble mixture on top.

Bake in the oven for 40-45 minutes until the crumble is browned and the fruit mixture bubbling.

Serve with thick cream or custard.

Recipe Tips

Bramley apples will turn to a lovely fluff underneath your crumble, in this recipe with toffee-ish brown sugar. If you want a crumble with distinct apple pieces, use a dessert apple and reduce the sugar quantity.

The apples require no pre-cooking for this simple crumble, and the cardamom-infused custard is a wonderful twist on a classic.

Ingredients

  • 150g/5½oz butter, softened
  • 60g/2¼oz caster sugar
  • 1 tbsp plain flour
  • 70g/2½oz flaked almonds
  • ½ tsp ground cinnamon
  • 60g/2¼oz panko breadcrumbs
  • 5 large Royal Gala apples, coarsely grated

For the cardamom custard

  • 5 cardamom pods, seeds only
  • 300ml/10fl oz whipping cream
  • 1 tsp vanilla extract
  • 2 free-range egg yolks
  • 1½ tbsp caster sugar
  • ½ tsp cornflour

Method

Preheat the oven to 180C/160C Fan/Gas 4. Beat the butter and sugar together in a large bowl.

Mix together the flour, almonds, cinnamon and breadcrumbs in another bowl. Tip this into the butter-sugar mixture and rub in with your fingers to form a thick, crumbly dough.

Put the grated apples into a 20cm/8in square ovenproof dish. Spread the crumble mixture on top and bake for 30 minutes, or until brown.

Meanwhile, to make the cardamom custard, grind the cardamom seeds to a powder using a pestle and mortar,. Place a heavy-bottomed saucepan over a medium heat and add the cream, cardamom and vanilla. Bring to the boil, reduce the heat and simmer for 3 minutes. Set aside to cool slightly, then strain into a bowl using a fine sieve.

Whisk the egg yolks, sugar and cornflour together in a large bowl. Pour in the warm cream mixture, whisking constantly. Pour this mixture back into the saucepan and cook over a low heat for 6–8 minutes, or until the custard thickens.

Serve the warm apple crumble with the cardamom custard.

  • тимьян — 4 веточки
  • сахар — 35 г

  • яблоки — 1,5 кг
  • масло сливочное — 50 г
  • сахар — 4 ст.л.
  • тимьян — 6 веточек
  • лимон (необязательно)1 долька
  • для топпинга
  • масло сливочное — 150 г
  • мука пшеничная — 300 г
  • сахар — 150 г

Пошаговый рецепт приготовления

Тимьян вымыть, обсушить на бумажном полотенце, отделить листики. Яблоки очистить, удалить сердцевину, нарезать дольками. Чтобы они не потемнели, положить в миску с водой и долькой лимона.

В сотейнике растопить 50 гр сливочного масла. Добавить яблоки, сахар, листочки тимьяна, тушить на среднем огне 5-8 минут, пока яблоки не станут мягкими. Смазать форму сливочным масло и выложить на дно начинку.

Приготовить топпинг. Ножом порубить муку и сливочное масло, добавить сахар, руками растереть в крошку. Посыпать поверх начинки. Выпекать 15-20 минут при 200°C/400F до золотистого цвета.

Смешать молоко и сливки, добавить листики тимьяна. Нагревать, помешивая, 5 минут на тихом огне, не доводя до кипения, чтобы крем впитал аромат тимьяна.

Желтки взбить с сахаром. Молоко процедить, влить в желтки и хорошо перемешать. Вернуть соусник на тихий огонь и варить, постоянно помешивая, пока крем не загустеет.

Перед подачей полить крамбль тимьяновым кремом.

So, why the name apple crumble and custard? I was looking for a good name for a general blog website. I had lots of excellent, original, and so I thought, clever ideas. Unfortunately, when I investigated registering them I found without exception that the .com version had already been taken, though often for sale and without an actual associated website. From this I concluded that perhaps my ideas were not that clever, and certainly not original.

I changed my thinking then from looking for a good website name to just something that was good. The first thing that occurred to me was apple crumble and custard, beloved by the whole family. This being unsurpassed in the pudding arena I stopped my search immediately and bought the name.

There is only one really critical factor to get right in a crumble and that is the crumble itself. When you have the right proportions of ingredients and have mastered the art of rubbing the butter into the flour then success is guaranteed. I reproduce the recipe I use below, this is from the excellent Delia Smith’s Complete Cookery Course book.

With the crumble sorted the fruity bit is generally based around the trusty bramley apple with other stuff, usually blackberries, thrown in. Add a bit of sugar if you like depending on the sweetness of your tooth. How much you cook the fruit before compiling the crumble is again according to taste and whether you like crunchy bits of fruit in your crumble, or more of a dollopy mixture.

This is a pudding truly worthy of having a website named in its honour.

Easy Apple Crumble with Vanilla Custard Sauce

Actually, I lie. This is not the same book. I got this from Chennai this April when we were there because I lose the original one athamma gave me. And with it went the recipe of this super-crazy-easy Apple Crumble Recipe! I had been searching for the book online ever since and finally found it on a road-side second hand book stall in Pondi Bazaar. Such is life 🙂

For more easy and delicious dessert recipes, I recommend:

  • Apples — 500gm (about 2-3 medium-sized apples)
  • Wheat flour / atta — 1 cup
  • Salted butter — 100gm + a bit for greasing
  • Sugar — 2tbsp + 2 tbsp
  • Salt — a pinch
  • Lemon juice — a few drops (optional)
  • Cinnamon stick — 1 (optional)
  1. Pre-heat oven to 350F / 180C
  2. Wash, peel, and chop the apples into small cubes. Add a few drops of lemon juice to prevent browning
  3. Mix in 2tbsp sugar and cook on a low fire until soft and mushy. Set aside to cool
  4. Mix salt and 2 tbsp sugar with the flour
  5. Lightly mix in the butter without kneading until you get a mixture that resembles bread crumbs.
  6. Grease a pie dish/cake tray with butter
  7. Lay the cooked apples evenly
  8. Add the flour mixture evenly on top and press down gently
  9. Sprinkle sugar on top.
  10. Bake in a pre-heated oven at 350F/180C for 25-30 mins
  11. Serve warm with chilled vanilla custard sauce


Let’s get started with apples. Good round red apples. Actually, any variety will work. Just go with red apples, ok? So about 500gm of that, or lets say 2-3 medium-sized apples.

Mix the butter and flour mixture gently with your fingers until well combined. Don’t knead. The resulting mixture will look like bread crumbs. In the above picture, there is slightly extra butter because I had a 108gm chunk and I added it all in. When you use just 100gm it will be drier and more crumb-like.

Bake in a preheated oven at 180C for 25-30 mins until the top turn golden brown. Do you see that crust? Now can you imagine what this dish can do your life? It’s also going to smell divine.

this looks yummm. I’ve made it with berries and peaches before, but weirdly never with apples! I use coarsely ground oats & roasted nuts with a little flour for the topping. Jaggery instead of sugar in the topping tastes super too. The custard topping is genius.

Cool recipe.. here in the US, there is a similar recipe called fruit cobbler, which is simpler.. no cooking of fruits. Just dunk the fruits, and top it with yellow cake mix and liberally add butter at the top and bake. We serve it with ice-cream.
