Apple Crisp

Crunchy, crispy apple crisp recipe! This is the easiest of the apple desserts. Just bake sliced tart apples topped with a streusel oat topping, with plenty of brown sugar, butter, and cinnamon. Serve with ice cream!

This apple crisp recipe comes from my friend Sue Jackson of Littleton, Massachusetts. She introduced it to me years ago and it has since become a favorite.

Easy Apple Crisp Recipe

One of the reasons I love this recipe is how easy it is to make. It’s as no-fuss as you can get.

  • To make it, you just layer sliced peeled apples that have been tossed with lemon juice and vanilla in a baking pan.
  • Then top the apples with a mixture of brown sugar, butter, cinnamon and oats
  • Bake!

Crunchy Apple Crisp Topping

It’s the crunchy topping that makes the apple crisp «crisp.» The brown sugar, oatmeal, and butter topping mixture caramelizes while it bakes, giving you a blanked of crispy, caramel-y wonderfulness over the baked apple slices.

Leftover Apple Crisp for Breakfast

Just like a slice of apple pie makes the best breakfast, so does this apple crisp! Make extra for leftovers, and serve a spoonful on top of a bowl of yogurt.

We’re nearing the end of summer. Are you happy or sad? Here in Arizona, we look forward to the end of summer. We’ve suffered through the sweltering heat and stayed inside for months. Autumn weather is nearly perfect here, and I’d say we’ve earned it. I can’t wait!

Hopefully, this weekend you’re bidding summer farewell with a long, leisurely weekend filled with family and friends. Are you in need of the perfect dessert? Here it is! I’ve taken all the flavors of apple pie (apples, brown sugar, cinnamon, and vanilla) and put them into an easy no-churn ice cream.

We all love apple pie or apple crisps with a big scoop of vanilla ice cream, right? So how delicious would it be to actually have ice cream that tastes like apple pie à la mode?!

Answer: Very delicious! Super delicious! Unbelievably delicious!

Apple Pie Ice Cream

The main flavor component of this ice cream is a brown sugar cinnamon apple compote. Diced apples are cooked with brown sugar and cinnamon until the apples are soft. A portion of the apple compote is pureed and mixed into the ice cream base (this adds apple pie flavor right into the ice cream itself!). The rest of the compote is layered into the ice cream along with crushed oatmeal cookies, which mimic the crust. Every single bite of this ice cream tastes like apple pie.

This dessert is perfect for the transition of seasons. And since you don’t need an ice cream maker, anyone can make it! Let’s kiss summer goodbye with apple pie ice cream!

Classic baked apples are an easy, comforting dessert. Filled with pecans, cinnamon, raisins, butter, and brown sugar, our baked apples recipe is perfect for cozy afternoons.

I was in New England a few weeks ago, at the height of apple picking season. I’m guessing they’re all down now, but our apples here in Northern California are at their peak. There are so many great varieties in the market to choose from!

Our Favorite Baked Apples Recipe

We first posted this recipe in 2006, during another trip east to visit my goddaughter and her family. A gang of us went apple picking and came home with so many we spent a week cooking them into pies, crisps, and these fabulous baked apples.

The Best Apples for Baked Apples

The girls and I used Rome Beauties, a variety of apple that is particularly well suited for baking this way. We based our recipe on one from the Joy of Cooking, with butter and brown sugar, and we fancied it up a bit with chopped pecans and raisins.

Growing up we always had baked apples served with a generous portion of vanilla ice cream, a combination I highly recommend.

The Best Apple Varieties for Baking

  • Granny Smith (green and tart)
  • Rome Beauty (red, mildly sweet and tart)
  • Honeycrisp
  • Braeburn (firm and spicy sweet)
  • Jonagold and Jonathans
  • Pink Lady
  • Melrose (cross between a Jonathan and a Red Delicious)
  • Winesap (spicy tart and thick skinned)

Variations on Baked Apples

  • Use dairy-free butter to make them vegan.

How to Make Baked Apples in the Microwave

If you’re short on time, you can «bake» your apples in the microwave. Prep the apples as the recipe instructs. Put them in a deep, microwave-safe casserole with a cover. Microwave for 4 minutes and check on the apples. When they are ready, they’ll be tender and a little slouchy, but not mushy. You may need to microwave them for a total of 10 minutes, depending on the size and variety of apples, as well as the wattage of your microwave.
