Подготовка.

  1. Помойте и продезинфицируйте Вашу емкость для брожения и все оборудование, которое будет соприкасаться с будущим сидром.
  2. Достаньте из упаковки подсластитель и дрожжи и отложите.

Приготовление

  1. Откройте пакет и вылейте содержимое в чистый ферментер.
  2. Добавьте чистую воду и декстрозу или обычный сахар в Вашу емкость в количестве, указанном на упаковке. Обычный сахар может дать бражный привкус готовому продукту, поэтому мы рекомендуем использовать декстрозу.
  3. Доведите объем сбраживаемого сырья до указанного на упаковке значения, добавьте подсластитель и хорошо перемешайте.
  4. Температура жидкости должна быть в диапазоне 18-24 градуса, после этого можно добавить дрожжи.
  5. Поместите емкость в место, где будет проходить брожение. После этого установите гидрозатвор и залейте, а него воду или водку наполовину.

Брожение.

  1. Сбраживать сидр лучше всего при температуре 18-24 градуса.
  2. Подождите 7-10 дней, до тех пор, пока гидрозатвор не перестанет «работать» и проверьте конечную плотность продукта ареометром. Если конечная плотность ниже 3х %, то сидр можно разливать. Если плотность выше 3% , оставьте сидр еще на 3-4 дня и сделайте повторный замер.
  3. Помойте и продезинфицируйте бутылки, сифон, трубки и все оборудование, с которым будет соприкасаться сидр.
  4. Разлейте сидр по бутылкам, не доливая 4-5 см до верха бутылки. Добавьте в каждую бутылку декстрозу из расчета 7-9 грамм на литр или леденцы (дозировка указана на упаковке).
  5. Оставьте сидр на карбонизации в течении 2х- 3х недель при температуре 18-24 градуса в темном месте.

Дегустация

  1. Перед употреблением поставьте сидр в холодильник на несколько часов.

Эпплджек – американский кальвадос

В США уже более двухсот лет существует свой вариант яблочного бренди, отличающийся по вкусу от «старшего брата», называется он эпплджек.

Понятно, что рецепт приготовления яблочного бренди попал в США вместе с переселенцами, однако на месте он был адаптирован к изменившимся реалиям.

Особенностью эпплджека была холодная фильтрация. Кстати, само название эпплджек и объясняет, что это за напиток — «jacking» означает повышение (в данном случае, концентрации алкоголя), apple – соответственно, яблоки, субстрат, из которого этот алкоголь будет вырабатываться. А вот пони Эпплджек производила Сидр.

Как происходит холодная фильтрация? Полученный сидр из собранных осенью яблок с первыми холодами выносят на мороз и начинают замораживать. Вода замерзает гораздо раньше спирта, поэтому задача эпплджекера состоит только в том, чтобы вовремя отколупать корку льда и выкинуть подальше, залив оставшийся сорокаградусный продукт выдерживаться в бочках. Таким нехитрым способом и получался классический американский эпплджек. Ходят слухи, что сам Джордж Вашингтон занимался производством этого напитка, узнав рецепт у владельца винокурни Laird and Company, Роберта Лейрда.

Основной удар по эпплджеку пришёлся во время сухого закона, когда вместо своего яблочного бренди в США стали завозить французский кальвадос. Laird and Company, кстати, до сих пор существует, она пережила сухой закон, но теперь эпплджек они производят по классической технологии.

Технология холодной фильтрации в производстве яблочного бренди постепенно изживает себя, и это правильно. Из яблок получается самое большое количество метилового спирта, а холодная фильтрация метиловый спирт не удаляет.

Напоследок предлагаем рецепт коктейля на основе американского яблочного бренди Jack Rose (Джек Роуз). Конечно, коктейль не сильно пострадает, если для него использовать французский кальвадос, тем более, что во времена сухого закона в основном последний и продавался.

Ингредиенты:

Кальвадос – 60 мл,лимонный сок – 20 мл,сироп гренадин – 20 мл.

Приготовление: Смешать ингредиенты в шейкере со льдом. Процедить в бокал.

Speed controls

The app is not bad but the interface is interface is is very cluttered and there is no way to speed up the video. Of the two, I’d forgive the interface issues if I could speed through the video at 1.5 or 2x’s, slowing down for the sections that are new and unfamiliar.

Right now I’m watching the videos in WebPlayer off the developer site and marking them as viewed in the WWDC app, in the hope that someday the dawn will break, the birds will sing, and most significantly of all, the app will allow me to speed up video.

Disappointing and has unacceptable bugs

Would give 0 stars if possible. There is no way on iPad to control playback speed. There are so many videos to watch developers need to be able to easily increase playback speed if desired. Tried downloading video hoping this would allow access to speed control. Still no controls for speed and worse yet there is a bug where you are not able to delete the downloaded video so it will take up large amount of space on device forever. These are basic things and it is unbelievable Apple developers created this app and that these basic things don’t work. Very disappointed. Please at least provide a way to delete a downloaded video. Running iOS 12.3.1 on iPad Pro. Desktop version seems to have speed control but didn’t really want to watch the videos on Mac. Prefer to watch on iPad.

The sign up process is a nightmare

Just to be clear, this review only covers a small portion of the app, (the only portion I have gotten to so far.) I tried initially signing up for the developer program through the app, but the app wouldn’t accept my photo id and it didn’t give me a reason why. I gave up on the app after 10 attempts and in summary, since then, I have talked to a few support agents which who told me that I probably had to just try it again and I have been hitting errors such as “You cannot currently ___, please try again later”. I’m sure if things go right this app is a great experience, but when things go wrong there is no direction on how to fix it. I eventually figured out that my payment method was expired and that was the issue, but that was after spending hours combing forums to try to solve the problem myself.
