Apple Pie Coffee Cake
I have a knack for inventing things that have already been invented. I made my husband an apple pie for his birthday, and was reminded how annoying it is to peel, core, and chop a lot of apples. But I really like pies made with fresh fruit, so it’s not a process I’m planning on giving up anytime soon.
I went ahead and bought a jar of apple pie filling anyway, just in case I wanted to make a quicker pie with it, or do something else. I thought it might be really brilliant to use the filling in a coffee cake, and hey! It turns out there are lots of other brilliant people out there who have thought the same exact thing.
But my coffee cake is vegan, so nanner nanner boo boo! It’s also really quick and easy to put together, so it’s perfect for that lazy Sunday morning-turned-afternoon baking project.
Let this cake cool for a bit before cutting and you’ll be surprised how easy it is to serve; the cake holds up really well and doesn’t fall apart when slicing. It would be really nice served with a little scoop of vegan ice cream.
Apple Pie Coffee Cake
Makes 1 Cake
2 1/2 Cups Flour
1 Cup Granulated Sugar
1 tsp Baking Powder
3/4 tsp Salt*
1/2 tsp Cinnamon
2/3 Cup Canola Oil, or 2/3 Cup Earth Balance Margarine, softened
2/3 Cup Soymilk + 2 tsp Apple Cider Vinegar (or lemon juice)
2 Tbs Cornstarch mixed with 1/2 Cup Water
2 tsp Vanilla Extract
1 20 to 25 oz Jar Apple Pie Filling
1 Tbs Sugar mixed with 1 tsp Cinnamon, for topping.
*Reduce salt to 1/2 tsp if using Earth Balance.
Preheat oven to 350º F.
Combine all the dry ingredients of the cake and mix well. Add all of the liquid ingredients and fold the batter until just combined. The batter should be thick and nearly dough-like, as this will prevent the filling from sinking to the bottom of the pan.
Spread 1/2 of the batter in the bottom of a 9×11″ (or whatever) greased baking dish.
Add apple pie filling evenly over the top.
Spoon the rest of the batter over the top in clumps, leaving some of the apple filling showing through.
Sprinkle with cinnamon sugar mixture.
Bake for 80 to 90 minutes or until a tester comes out clean. Be sure not to under bake. You may wish to cover the coffee cake with aluminum foil for the last 20-30 minutes to prevent over-browning.
Remove coffee cake from oven and let cool before serving. It’s just as good or better the next day.

I made this last night for my fam and they loved it! I even added a little nutmeg to the batter and used wheat flour instead of white- definitely made it look different than these beautiful pics, but it worked great! I’d like to try it again with fresh apples and see how it goes. Thanks for the great dessert/breakfast item.:)

Any way, I didn’t have the apple pie filling so I used some canned tart cherries I made. It came out SOOO delicious. I HAVE TO try this using the apple pie filling it must be amazing!! This was probably the best thing I’ve made in quite awhile! It got gobbled up completely almost right after I took it out of the oven! The smell was so irresistible and it tasted even better. Next time I need to buy a different dish to make this in (i used a casserole dish) so there’ll be more servings. Mmmm.

I made this a few weeks ago and it was awesome! I keep mostly vegan, and my fiance doesn’t, but he loved it too! Think if I made it with that baking splenda, it would cut down the calories a little? We just started our wedding diet, but I’ve been craving this again!
SOoooooo yummy. I made the cake this morning. I used fresh apples that I cooked in sugar, lemon juice and ginger instead of the apple pie filling. I also used water instead of the soy milk and whole wheat white flour…I was improvising….and it turned out great!! Awesome recipe.
I just made this and it’s yumyum. I made a few modifications just for the hell of it, some ww flour, some apple sauce instead of all the oil and buttermilk instead of soy (I’m not vegan). Now how do I stop eating it?

I don’t core apples – I just use the small end of a melon baller to scoop out the seedy center – that makes for less waste and is much easier on my hands (save the RSI for the keyboard, right?).

This easy apple pie coffee cake recipe begins with boxed cake mix and ends with a homemade apple pie filling. It’s the perfect combination of flavor and simplicity.
We love this apple coffee cake from a cake mix! Sometimes you just need something quick and easy, and this fall favorite is just the ticket.
We’re smack dab in the middle of fall and I still can’t quite believe we’re here. This year has been one for the books (and I certainly imagine it will be in the history books in the future) and I’m still not entirely sure how this year can possibly feel like it just began while simultaneously feeling like it’s been going on for-ev-er (Sandlot status).
With the lack of events happening, it’s given me a lot of time to take some of my old favorite recipes and give them a facelift. (“What’s a facelift?!” …Can anyone name that 90’s movies?!)
This Apple Pie Coffee Cake with a maple glaze is one of those recipes. It was first made a little over 11 years ago for my sister’s bridal shower. Since then, it’s been a recipe my dad has always brought back up again, subtly (or not so subtly 😆 ) hinting he’d love to test it out again.
I made it for Father’s Day a few years ago, and subsequently posted it on the blog. The photos have been in dire need of a makeover and with all of the unexpected time I seem to have on my hands, this seemed like the perfect time to give this recipe the facelift it deserves.
Why This Recipe Is The Best:
- It begins with boxed cake mix! So incredibly simple and you can use white cake mix, yellow cake mix or spice cake mix.
- The homemade apple pie filling is only a few ingredients and really transforms the flavor of the recipe.
- It has a maple glaze on top, which tastes just like a homemade maple bar.
- The recipe serves about 12-15 people, so it’s perfect for a fall brunch or gathering.
Ingredients:
- 1 box of cake mix: white cake mix, spice cake mix, or yellow cake mix works (I used white cake mix for these photos)
- 1 cup sour cream
- 3 eggs, large
- 1/3 cup water
- vanilla extract
- ground cinnamon, nutmeg, allspice, and cloves
- apples
- brown sugar and granulated sugar
- butter, unsalted
- salt
- cornstarch
- powdered sugar
- maple syrup
All of these ingredients are used in 3 ways: to doctor up the cake mix, make the apple filling and make the maple glaze on top.
How to make coffee cake with boxed cake mix:
- Making coffee cake with cake mix is a really simple shortcut, especially when you doctor up the cake mix.
- Instead of following the instructions on the back of the cake mix box, you are going to use sour cream, eggs, water, vanilla extract and cinnamon in combination with the dry cake ix to make the coffee cake batter.
- It creates a rich flavor and texture with a denser crumb than if you followed the instructions on the back of the box.
- By adding a layer of homemade apple filling and topping the baked coffee cake with a glaze, the fact that you used cake mix instead of a homemade batter will totally remain a secret. 😉 (Although, truthfully, while I love a cake from scratch, cake mix has a special place in my heart.)

What kind of cake mix can I use?
- As mentioned earlier, you can use white cake mix, yellow cake mix or spiced cake mix.
- Just a couple things to note: I used white cake mix for these pictures so if you use spiced or yellow, the coloring will look different. Additionally, if you use spiced make mix, you can omit the cinnamon in the cake batter, if desired.
Why is this called a coffee cake if there’s no coffee in the recipe?
- I get this question a lot. There’s a lot of history to coffee cake, but the simplest answer is that it’s called coffee cake because it is meant to be served with coffee. While some recipes do have coffee in them, many, like this apple pie coffee cake, are a brunch-type cake to pair with a cup of coffee.
Can I make this with canned apple pie filling?
- Actually, yes! You can swap the homemade filling for canned and this already easy-as-pie- recipe just became even easier.
How long does this cake mix coffee cake last?
- Given the apples in the filling, this coffee cake is really meant to be eaten the day of or within a day or two of being baked.
What apples should I use?
- I prefer a sweet apple, like a Honeycrisp, Gala, Fuji or Ambrosia. You can use a Granny Smith or Pink Lady if you’re looking for something a little more tart (Granny Smith is very tart, and the Pink Lady is slightly tart and slightly sweet).
Apple Coffee Cake Baking Secrets:
- The batter is going to be very thick. Unlike a typical cake mix cake batter, this will take a little more effort to spread in your pan.
- I used a rectangular baking pan (11×8), but you can use a 9×13 rectangular baking dish or a 9×9 square baking dish. If you use the 9×13 baking dish, you will probably need to reduce the bake time by a few minutes. Alternatively, if you use a 9×9 square baking dish, you will probably need to add a few minutes to the overall bake time.
- You can substitute a vanilla glaze for the maple glaze, if desired. Or you can leave plain.

Apple Pie Coffee Cake is like two desserts in one. You get to enjoy an apple pie filling but instead of a crust made with graham cracker crumbs, you get a soft layer of cake.
Not to mention, I am a huge fan of fruit-based desserts. The tartness of the fruit provides a good balance to the sweetness and spices further enhance that.
Aside from the filling, my favorite part is the streusel topping which gives a contrast of texture to the whole thing.
What is good about this recipe is that this is purely homemade, made from scratch, no cake mix in the ingredients!
How do you make homemade Apple Pie Spice?
I simply combine these spices in the following ratio:
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- pinch allspice (optional)
You can add more of the cinnamon and more of the nutmeg if you want. A dash of ground ginger would not hurt either. Others add cardamom, too.
You can try to experiment and adjust depending on your taste. Once combined, store it in an airtight jar.

How do you make homemade Apple Pie Filling?
We have already shared with you how to make the homemade filling in this post and simply refer to it, it also has a step-by-step video.
What I like about this is that you can adjust the recipe depending on how sweet your fruits are. So, depending on the kind that you use, you might have to put more or less of the brown sugar.
How do you make Apple Pie Coffee Cake?
- Make the cake layer: Lightly grease a 9×13 pan and dash some flour. In a bowl, combine the dry ingredients and then, using a mixer, mix in the butter. Add the rest of the batter ingredients. Once fully incorporated and fluffy, spread half of the batter into the pan.
- Add the cinnamon filling: Prepare it by combining flour, butter, sugar, and cinnamon. When crumbs have formed, spread this over the batter then, pour in the remaining batter on top. Then, top with the apple pie filling.
- Add the streusel topping: Mix sugar, cinnamon, and salt with a fork then, mix in the butter. Then, add the flour slowly until crumbs are formed. Sprinkle these on top of the layers.
- Bake: Put this in the oven and bake at 350 degrees F for about 45 to 50 minutes. Let it cool to prepare it for the glaze.
- Serve: Make the glaze by simply mixing the ingredients. It should be thick and opaque. Drizzle it on top before serving.

Yes! You can make it in advance because it keeps well in the fridge and the freezer. Read on for the storage instructions.
