Rooted in traditions that are both pagan and Christian, Yablochniy Spas, like so many of Russia’s ancient holidays, has not only religious, but deep agrarian and culinary significance as well.

Few peasants living in the pre-revolutionary era could read or write, but they were deeply in touch with the rhythms of the agricultural seasons and observant of the celebrations of saints days, feasts and fasts. Over the centuries, these two important threads of their lives became interwoven to such an extent that peasant lore directed the planting and harvesting of certain crops on particular fixed points during the liturgical calendar. Yablochniy Spas is connected to the Christian celebration of the Transfiguration of the Lord.

Soviet leaders tried to discourage all liturgical holidays, but Yablochniy Spas proved a tenacious fixture in the Russian calendar. Happily, post-perestroika society has enthusiastically embraced a return to the full flung celebration of this harvest festival, which spotlights apples in all their glory: made into jam, pressed into cider or kvass, dried, preserved, made into pies, or just baked in the oven with sugar and nuts.

Devout Russians bring apples and other autumnal fruits such as plums and grapes to church on the eve of Yablochniy Spas to be blessed, and the day itself is spent in a lively holiday atmosphere of street fairs, dancing, and other harvest celebrations. A potent symbol for both pagans and Christians, apples represent life, immortality, and bounty. On Yablochniy Spas, apples contain special powers – one who eats an apple on the holiday and makes a wish will have it granted. Yablochniy Spas is also associated with a more sober reverence of the dead, and to this day, many pause to take the time to visit the graves of those who have died, bringing edible tributes, most especially apples to represent the Transfiguration, as well as honey and nuts.

No celebration of Yablochniy Spas is complete without a traditional Russian apple cake. While other cuisines separate pastry dough from fruit in cakes and pies, in Russia, the two are mixed together, which I find is a delightful way to experience the contrasting flavors of tart apple and creamy dough. This cake is easy to make and flexible in terms of ingredients. Topped with a spoonful of ice cream or whipped cream there really is no better way to usher in the flavors of autumn!

Russian Apple Cake:

This recipe, adapted from Lesley Chamberlain’s “The Food and Cooking of Russia” is a quick and easy one I’ve made many times, but each time is different since I like to play around with the fruit ingredients. Apples are wonderful, but I find they really benefit from being paired with other fruit flavors, as I have done here. The re-hydrated dried apples are optional, but I find they give the cake a very deep apple flavor that is hard to achieve from fresh apples by themselves.

Ingredients:

— 1 cup of dark rum or Calvados

— 75 ml (1/3 cup) of cherry, plum or other berry preserves or jam

— 50 grams of dried apple slices

— 50 grams of dried cherries

— 50 grams of raisins

— 750 grams of tart apples, peeled, cored, and diced into small pieces.

— 3 ripe plums, stone removed, chopped roughly

— 1 tsp of cinnamon

— 1 tsp of ground cloves

— 1 tsp of ground ginger

— 100 grams of sugar

— 150 ml of sour cream

— 60 grams of flour

— 10 grams (1/2 tablespoon) of butter

— 5 Tbl of fresh breadcrumbs

Instructions:

1. Preheat the oven to 350 F (180 C). Adjust the oven rack to the middle level.

2. Place the dried fruit, jam, and rum or Calvados into a saucepan over medium heat. Bring to a simmer, then lower heat and cook for 10 minutes. Remove from heat, cover, and let sit for at least 20 minutes. Set aside.

3. Butter a 9-inch spring form pan or bundt mold and coat with breadcrumbs.

4. Separate the eggs.

5. Toss the fresh apple and plum pieces with the stewed dried fruits and rum.

6. Beat the egg yolks and sugar in a standing mixture at medium speed until slightly thickened and creamy (2 minutes). Add the sour cream and beat for an additional 20 seconds at medium low speed.

7. Add the flour, spices, salt, and apple mixture to the batter.

8. In a clean bowl, beat the egg whites until they form stiff, shiny peaks.

9. Gently fold the batter into the egg whites until just combined.

10. Pour the batter into the spring form pan or bundt mold. Twirl the pan sharply to the left and right a few times to release any air pockets.

11. Bake in the preheated oven for 40 minutes until puffed and golden. Let cool for 10 minutes and serve, topped with ice cream or whipped cream.

On August 19, the Orthodox Church celebrates the Jesus Christ Transfiguration — the Lord God and Savior.

On this day, according to the Gospel, the apostles saw it transfigured in all the Divine, eternal glory: «After six days, Jesus took Peter, James and John, his brother, and led them to a high mountain alone, and was transfigured before them: and His face shone like the sun, and his garments have become white like light «(Mt 17: 1-2). And from heaven came a voice: «This is my beloved son, listen to him!».

By this action, Jesus not only showed his disciples his true image and divine origin, but also made them understand that the following of his teaching, the Word of God, leads every person to resurrection and Transfiguration.

To celebrate this day as a holiday, they began in Greece, in the IV century ad. The day of Transfiguration was at the time of ripening of grapes there. Christians brought fragrant clusters of grapes to the church for blessing and as a symbol of gratitude to God.

In Russia this holiday has received the national name — Apple Savior or in Russian — Apple Spas. In most of Russia, the grapes do not grow, so instead of it they consecrate apples. On this day, the first harvests of ripe fruits were collected, apple fairs were organized, each believer considered it his duty to treat and bestow the consecrated fruits to his neighbors and poor.

Before the Apple Spas it is not accepted to eat apples. This day, on the contrary, all kinds of dishes and sweets are prepared from ripened and consecrated fruits. Having bitten an apple, you can make a wish, which is surely fulfilled. Apples can be prepared in all ways — raw, baked, fried or boiled. Fruits and dishes from apples occupy a place of honor on the table in a beautiful utensils, such as cups, fruit pots and plates with Khokhloma or Gzhel painting.

The main attribute of the festive table is the apple pie. It is baked in every house according to the unique recipe of the landlady, while it is necessary to condemn the coveted words: «What is meant, it’s decided. What is thought out, it will come true. What will come true, it will not fail.» Dishes from natural products are best served in dishes made by hand from natural materials. Ideal for this case are dishes made of clay or wood.

On this day, you can do nothing at home, except cooking. Any homework should be left for another day. Also on this day, according to an old custom, the mistresses perform the ritual of house purifying, with the help of apples and a wax candle: the apple is cut into two halves and the core is pulled out — a candle is placed in one half and the house is passed around, reading prayers and asking the Lord to protect the shelter from adversity, and bestow the family peace and harmony. Then wax is transferred from the candle to the other half of the apple, firmly bind the two halves of the fruit with a rope, take them away from home and dig in the ground.

Another name of the Apple Spas is the «first autumn». It is believed that the nights after the Apple Spas become colder, autumn approaches: «Spas came, prepare the gloves for safety!». They say that the weather on this day determines what will be the autumn — dry and warm or rainy and cold.

Apple Spas is an illustrative example, of how pagan customs intertwined with Orthodox holidays and acquired a new sacred meaning. On this day a man, having collected and sanctified the generous gifts of nature, having spent an evening with family and friends at holiday table, should once again rejoice at the life given to him and think about his own destiny.

Before you grab your towel and get undressed, no, this has nothing to do saunas or back rubs, so put your pants back on. This is a family blog.

No. Spas in Russian means “savior”. The ‘Spases‘ are three folk holidays celebrated in August, that bring the Russian summer season to a close with style. And food.

August 14 (Gregorian) is mokryi Spas, or “Wet Savior”, but is more commonly referred to as Honey Spas (medovyi Spas), so named because it coincides with the late-summer gathering of honey.

The second, and most important of the three takes place today. Spas na gore/iablochnyi Spas, aka, “Savior on the Hill”/”Apple Spas”.

Apple Spas falls during the Feast of the Transfiguration in the Eastern Orthodox Calendar (August 19, Gregorian; August 6, Julian). Fruits and veggies from orchards and gardens are blessed today, and it’s considered bad luck to eat apples until now. More specifically, children in heaven are said to receive apples to eat this day, only if their living parents have not done so before Apple Spas.

The third Spas is orekhovyi Spas–Nut Savior–which once coincided with–you guessed it–the gathering of nuts at month’s end (August 29, Gregorian; August 16, Julian).

The Spas developed out of agrarian festivals during which the first spoils of the harvest were consecrated in honor of nature deities, in the hopes of a bountiful harvest and mild winter. Over the centuries the folk festivals became inextricably intertwined with Christian traditions.

The Apples Spas coincidentally falls on the anniversary of the start of the 1991 coup in which Soviet leader Mikhail Gorbachev was kidnapped by hard-liners who disagreed with his reformist policies. The coup failed, and within days, five Soviet republics had declared their independence. By the year’s end, the 75 year-old Soviet Union had ceased to exist.

This is not Russian Spas but it looks like fun.
