Ingredients

  • 250g French bean , trimmed
  • 2 eating apples , such as Cox’s
  • ¼ celeriac
  • juice of ½ lemon
  • 50g blanched hazelnut
  • 1 tbsp sunflower oil
  • 8 slices smoked streaky bacon , chopped into small pieces
  • 4 handfuls salad leaves, such as frisée or rocket

For the dressing

  • 4 tbsp hazelnut oil
  • 1 tbsp cider vinegar
  • 1 tsp Dijon mustard

Method

Whisk all the dressing ingredients together with seasoning in a small bowl, then set aside. Bring a large pan of salted water to the boil and cook the beans for 5-6 mins until still slightly crunchy. Drain and refresh under cold water and set aside. Peel the apples and celeriac, cut into thin matchsticks, then toss in the lemon juice to stop them going brown.

Put a pan over a medium heat and toast the hazelnuts for a few mins until golden. Tip on a board and roughly chop.

Place the pan back on the heat with the oil, then fry the bacon until crisp. To assemble the salad, put the beans, celeriac, apple and leaves together in a bowl with most of the dressing and toss together. Pile the salad onto 4 plates and top with chopped bacon. Scatter over the hazelnuts, drizzle with the remaining dressing and serve.

Summer is the season for cookouts and potato salad, isn’t it?

Our standard potato salad usually includes pickle juice and hard-boiled eggs.

But a potato salad with bacon and apples? Yes!

This is a completely different take on a summer potato salad, seasoned with mustard, bacon, and the taste that makes you smile with surprise when you bite into it — chunks of apple.

My friend Heidi H made this potato salad with apples and bacon for a group of us this week; it’s based on a recipe she found in the Boston Globe.

Everyone who ate it loved the apple, bacon, mustard, potato combo.

Potato Salad With Bacon and Apples

Ingredients

  • 5 thick strips bacon
  • 1 large red or yellow onion, chopped
  • Salt
  • 2 Golden Delicious apples, peeled, cored, and cut in 1/2-inch dice
  • 3 pounds small yellow Yukon Gold potatoes, quartered
  • 4 green onions, thinly sliced, including the greens
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup Dijon mustard
  • 1 tablespoon chopped fresh thyme or 1 teaspoon dried
  • 1 1/2 teaspoons pepper

Method

Combine the potatoes and enough cold water to cover by a couple of inches in a large saucepan. Add a generous pinch of salt.

Bring to a boil, lower the heat, and cover the pan. Simmer for 15 minutes or until the potatoes are tender when pierced with a fork. Drain well.

While the potatoes are cooking, cook the bacon in a heavy-based skillet over medium heat. Once cooked, remove the bacon to a plate lined with paper towels.

Reserve the bacon fat in the pan.

Once the bacon is cool, chop it.

Cook the onion in the fat in the pan on medium heat, until softened and just starting to brown, about 5 minutes.

Use a slotted spoon to remove the onion from the pan to a large bowl. Add the chopped apple to the bowl.

Add the potatoes and chopped bacon to the onions and apple. Add the green onions, olive oil, vinegar, mustard, and thyme. Salt and pepper to taste.

Chicken apple bacon salad

Chicken, bacon, and apple is such a great flavor combination. In this simple salad, you get savory chicken, sweet and salty bacon, and sweet apples. You can add a number of additional ingredients to clear out your fridge or just add lots of texture and flavor to this easy salad recipe.

Ingredients:
  • 8 ounces chicken breasts, about 2-4 depending on size
  • 4 slices bacon
  • ⅓ cup extra virgin olive oil
  • 1/4 cup lemon juice (about 1-1 ½ whole lemons)
  • 1- 1 ½ Tablespoons dijon mustard
  • 1 large head of romaine lettuce, or about 10-12 cups shredded.
  • 1 medium Red Delicious apple
  • ¼ cup chopped toasted pecans
  • ¼ cup shredded cheddar cheese

Optional toppings : avocado, thinly sliced red onion, celery, corn, other vegetables

Instructions:

1. Cook bacon and chicken in a large skillet, until both are cooked through.

2. While meat is cooking, add lemon juice, olive oil, and dijon mustard to a small mixing bowl. Whisk together, and set aside.

3. Wash and thinly chop lettuce into shreds. Transfer to large mixing bowl. Core and chop apple into ½ inch pieces and add to bowl.

4. When chicken and bacon are done cooking, remove from heat and place bacon on a paper towel or towel to drain excess fat. Chop cooked chicken breasts and bacon into similar sized pieces. Transfer to the bowl with lettuce in it. Top lettuce, chopped apple, and meat with cheddar cheese, pecans, and optional toppings, if desired. Serve with dressing on the side to be dressed individually.

Bacon, Pecan and Apple Salad

Who said that salad can’t make a fantastic camping meal? Well, we’ve heard rumors of disgruntled folk who don’t believe salad belongs at the campsite. We’d like to change their minds. We get it, when you think of spending a weekend outdoors camping you’re thinking s’mores not salad. And believe us, we want those s’mores too. But we also enjoy a fresh, delicious salad on a warm summer day. Plus we like to add bacon to our salad. And fruit. And nuts. Oh and a kick a** dressing. So believe us when we say that we were a little blown away by just how well this bacon, pecan, and apple salad turned out.

Bacon, Pecan and Apple Salad

Salads really are an easy camping meal because they can be thrown together fast and eaten quickly for a family that is on the go for the weekend. This salad is easy to throw together at the campsite but is best if some items are prepared at home. Bacon is easy to prepare ahead of time and store in a container and the dressing can be whipped together quickly and stored as well.

We originally found this recipe over at Laurens Latest and we’re able to make a few adaptions to make it an easy camping meal. This bacon, pecan and apple salad meshes so many amazing flavors and is all brought together with the mustardy tang of the balsamic dressing. Even the kids devoured this salad and we all know how hard it can be to get kids to eat salad!

Spinach Apple Salad with Bacon, Walnuts and Blue Cheese

This apple salad made with spinach, bacon, walnuts and blue cheese is as delicious as it is beautiful to look at. Absolutely perfect for your holiday table!

Is it okay to admit that the entire salad idea was inspired by one ingredient? I had some time to kill last week before I was to meet my husband after work, so I wondered into a grocery store…

That sounds like the beginning of a bad joke but in reality I often wonder though supermarkets looking for inspiration. Often I have no idea what I’d cook until I see something that immediately gives me an idea.

This time it was apples that are coral pink inside!

The variety I stumbled upon is called Kissabel and has a distinct berry flavour. I was so smitten with these pink-fleshed beauties I knew I had to showcase them in a dish where they’d be served raw.

I knew it would have to be an apple salad of sorts, so I just had to come up with ingredients that would compliment my apples.

How do you make an apple salad?

My general salad formula is simple. Something green, something savoury, something sweet, something crunchy, something tangy.

This particular apple salad is no exception. Once you have all your elements, it’s easy to change things up and come up with a whole slew of tasty and nutritious salads. It’s using the same ingredients over and over again that turns us off salads altogether!

When picking ingredients for my apple salad I remembered a French farmer and cheese producer I met this past summer while visiting the Jura region of France. I was on a press tour learning about how a century old Comte cheese is made, which was presented by a charming lady.

Despite living in rural France and working with cows, she looked quite elegant. I was wondering how looking fab is so effortless for French women.

Then I heard about her lunch. An apple, a cube of cheese and a walnut. That’s how!!

So you can say that the idea for this apple salad came from the fabulous French farmer!

How do you make apple salad dressing?

You can choose either a creamy dressing or a vinaigrette. I chose to go with a creamy blue cheese dressing, which balances out the sweetness of the apples in a perfect way.

A simple French-style vinaigrette will also be delicious in this recipe.

I’ve made my blue cheese dressing in a food processor for a smooth finish but if you don’t mind a bit of texture, just a fork and a bowl will do.

I was so pleased with how this apple salad turned out. Everyone in the family loved it. I think my son was the biggest fan due to a generous amount of cheese and bacon no doubt!

What apples should I use for apple salad?

This seasonal apple salad would be a perfect addition to your holiday table as it would bring a welcome balance to rich and creamy dishes. If you can find pink-fleshed apples, do use them.

Apart from being delicious and beautiful, they do NOT turn brown and keep their colour for hours, which makes this salad a great make-ahead dish!

Other pink-fleshed apple variety known to me in the UK is called Surprise. In the US the most common ones are Pink Pearl, Hidden Rose, Pink Sparkle, Mountain Rose and many more. You can read about them here.
