This cabbage, carrot and apple salad is one of my favorite all-year-around salads.

It is fantastic easy to make and it is a great side dish for many different dishes. I personally love to serve this cabbage salad with grilled chicken but it also goes great together with pork and beef meat.

Being very easy to make and tasteful is one of the best things about this salad. However, what I like the most about this salad is the homemade dressing. It is hard to explain — but these particular set of ingredients in this dressing, simply gives it a wonderful taste which goes perfectly together with the crisp and a little bitter pointed cabbage, the carrots and the apples.

Finally, this salad is sprinkled with coarsely chopped almonds which are fried on a dry frying pan with a handful of sesame seeds.

If you are a regular reader of my Nordic food blog you know that I am always looking for both healthy and simple dishes. I really enjoy making some delicious food during the week even though I am busy with work, training and friends.

In order to make all this work it has to be easy. Therefore, this salad is very high on my list. It is packed with great vitamins and fibers which naturally also makes it a filling dish.

Recipe for Cabbage Carrot Apple Salad

As mentioned several times, this salad is very easy to prepare. You start by removing any bad leaves from the pointed cabbage and then finely shred half of it. I normally take my time to do a good job with the shredding.

Then you peel the carrots and coarsely grate them. Rinse the apples under cold water, remove the core and cut thin slices.

Now mix the prepared cabbage, carrots and apples in a large and nice salad bowl.

Coarsely chop the almonds and fry them together with the sesame seeds on a hot and dry frying pan. Sprinkle the fried almonds and seeds over the salad.

Finally, mix the ingredients for the dressing. Serve it together with the salad and let people use it as they like.

Ingredients

  • 400 g red cabbage
  • 200 g carrots
  • 200 g apples
  • 120 g corn
  • 50 g cashew nuts
  • 1 teaspoon cumin
  • 1 teaspoon of salt
  • 40 ml of aceite oliva
  • the juice of a lemon (50 ml approx.)
  • yogurt and peppermint sauce

Preparation

We put the cashews in the glass and chop during 4 seconds at speed 4. We take out and reserve.

Put the cabbage, apples and carrots peeled, washed and cut into large pieces in the glass. Add the oil, cumin, lemon and salt. We chop during 30 seconds at speed 4.

Pour into a salad bowl and add the cashews and corn. We mix with a spoon.

We serve with the yogurt sauce

Notes

For weight control diets, if you want to reduce the caloric intake, you can eliminate the cashews and reduce or eliminate the olive oil.

Shredded Cabbage & Carrot Salad with Apple Cider Vinegar Dressing

Shredded Red Cabbage & Shaved Carrot Salad

Prep Time: 10 minutes

Ingredients:

  • 4 cups raw shredded red cabbage (about 1 medium purple cabbage or ½ large head of cabbage)
  • 4 large carrots, about 2 cups of carrot ribbons
  • 3 tbsp apple cider vinegar
  • 1 tsp raw honey
  • 1 small garlic clove, minced or pureed
  • 1 tbsp Dijon mustard
  • Squeeze of lemon juice
  • Salt & pepper, to taste
  • 1/4 cup extra virgin olive oil

Steps:

  1. Cut off the end of the cabbage. Cut into quarters and place into a food processor. Pulse for 10-15 seconds until the cabbage is shredded into small pieces.
  2. Rinse carrots. Using a carrot peeler, make large ribbons.
  3. In a mason jar, shake together the apple cider vinegar, raw honey, minced garlic clove, Dijon mustard, lemon juice, salt & pepper and olive oil. Toss the cabbage and carrots in the dressing.
  4. Cover and place in the fridge. Let sit at least 2 hours before serving, preferably overnight.

Russian Cabbage Salad with Carrot Recipe

Russian pickled cabbage salad I can call Russian slaw with vegetable oil. I making this salad all my life and it is one of the healthiest versions of salads from cabbage. Very important to choose the right cabbage. We need cabbage that is a light color and good for pickling. Green cabbage (summer cabbage) is fluffy not for this recipe. Traditionally in Russia, we use sunflower oil for this salad.

I tried for this salad use instead of lemon juice – apple vinegar, white vinegar, orange juice. I like lemon juice the best.

*About cabbage pickling (sauerkraut) for winter some tips. For preserving good only fall cabbage. Because summer cabbage is not will be good as fall cabbage taste wise and not preserving well through the winter time. Also, important about salt. Use only coarse plain pure salt. Fine fancy salt has some additional ingredients and not going stay well through winter.

Pickled cabbage is very rich in vitamins C and very good in winter time with boiled potatoes. It is a very common Russian dish and almost every family has it on a table at winter time, especially, in the North of Russia. It is so good as a starter dish, just add vegetable oil and onion. We also use it in other dishes as soups. Cranberries or apples added in Russian pickled cabbage (sauerkraut) for additional flavors. Best by taste vegetables picked at wooden barrels.

Carrot apple cabbage coleslaw is made with sliced cabbage, shredded carrots, red apple, parsley, pumpkin seeds and a paleo mayonnaise dressing. It’s a great salad to put together as a side dish for dinner or meal prep for easy lunches.

This salad is full of flavor! It’s my husband’s new favorite.

Made with a variety of simple, affordable vegetables and combined with an easy dressing. I used paleo-friendly mayonnaise for the base but you can use regular mayonnaise as well.

With a bit of shredding and chopping, you’ll put together a beautiful salad that’s full of color and nutrition. This salad can be paired with almost any recipe. Serve with chicken, burgers, pork roast, and steak. It’s a great recipe to have for any time of the year.

Carrot Apple Cabbage Coleslaw Ingredients

  • Red Cabbage – Look for a small purple cabbage, not a big one. You’ll need half of the cabbage (about 3 cups sliced thin).
  • Carrots – You’ll need 2 cups of shredded carrots.
  • Apple – 1 chopped apple is used. You can slice it thin or cut into cubes
  • Parsley – 1/2 a cup of chopped parsley (this is optional if you don’t like parsley)
  • Red Onion – Slice the red onion thin and then into smaller pieces.
  • Pumpkin Seeds – You can use raw or roasted pumpkin seeds.
  • Dressing – the dressing is made from mayonnaise (I used a non-dairy version), apple cider vinegar and salt.

The Dairy-Free Mayonnaise I Use

I love chosen foods classic mayonnaise. It’s made with pure avocado oil, cage-free eggs, organic vinegar, organic mustard, and spices.

Most other store-bought mayonnaise uses canola oil, sugar, and preservatives.

If you’re looking for mayonnaise that’s sugar-free, uses unrefined oil, is paleo-friendly, and can be used on candida and diabetic diets, then this is a good option to try. I buy mine at Costco. If you can’t find it locally, you can order it online here.

How To Make The Carrot Apple Cabbage Coleslaw

  • Shred the Carrots – You can use a cheese grater, food processor or mandolin slicer to shred the carrots.
  • Chop the Cabbage – Slice the cabbage into thin strips.
  • Slice The Apple – You can chop the apple into thin slices or small cubes.
  • Assemble The Salad – Add the cabbage, carrots, apple, red onion, parsley and pumpkin seeds to a large bowl.
  • Toss With Dressing – In a small bowl, mix together the mayonnaise, apple cider vinegar and salt. Pour overtop of the salad and toss together until evenly coated.

How To Store Coleslaw

This salad stores well in the fridge, all thanks to the hearty vegetables used. You can store it in an airtight container for up to 1 week.
