Carrot Tomato Soup Recipe with Canned or Fresh Tomatoes
This carrot tomato soup recipe is an update from the archives. Originally posted in July of 2012, it’s still a family favorite that I just made with some fresh picked tomatoes and carrots from our garden.
This beautiful carrot tomato soup is slightly sweet and oh so creamy and comforting from pureed oven roasted carrots, making dairy totally optional.
DEALING WITH MORNING SICKNESS
Now that I’m in my second trimester, “morning” (all day) sickness is still around but less often I’m also getting better at coping with it. I’m learning that it’s important to not let myself get hungry. My digestion is so slow that if I get to the point where I actually feel hungry, it’s too late and I’ll feel sick before anything I eat can actually reach my stomach I’m also starting to understand the whole pregnancy craving thing It’s not really that I crave a specific food What happens is that the thought of so many foods make me gag, so when I think of something that doesn’t, I feel like I have to have it It can be anything from spring rolls, to potstickers, to Cool Ranch Doritos or tomato soup.
I’m trying to stay away from processed foods as much as possible (but yes there is a bag of Doritos on my nightstand, thank you Eric for running to the store to get it!) so when I’m craving something that can be made naturally, I try to make it Or…I teach Eric to make it while I lie on the couch nursing a ginger ale As I type this he’s in the kitchen frying potstickers while I explain from the couch how to tell when the bottom is crispy enough.
Now, I hope you don’t think I’m whining here I’m absolutely thrilled to be pregnant and can’t wait to hear the heartbeat, feel the first kicks, and meet our little baby Johnson In fact, here’s our first picture of the little kalamata olive (now the size of a lemon!) growing in my tummy.
I just had no idea how much making a baby can totally kick your butt! I always sympathized with my pregnant friends, but now I can definitely empathize as well.
HEALTHY CARROT TOMATO SOUP RECIPE
My latest healthy craving has been tomato soup With all the rain we’ve been having, it’s not even close to tomato season here So I used canned tomatoes for this recipe While you can definitely substitute fresh tomatoes (just blend them until you get about 2 cups worth), I love that this is a recipe I can enjoy year round, even when tomatoes aren’t in season.
Because of the indigestion (which I’d never really experienced much before being pregnant), I didn’t want the soup too acidic But I also didn’t want to add a bunch of sugar to try and sweeten it up Instead I decided to use some local carrots They’re pretty much always in season here, and a great source of vitamin A for the baby’s development and much needed fiber for my, well, you know.
Wow, just looking at these pictures is making me want more soup, and grilled cheese.

Carrot & tomato soup
A creamy vegetable soup flavoured with bay and natural sweetness from the carrots

Ingredients
- 3 tbsp olive oil
- 2 onions , chopped
- 2 celery sticks, chopped
- 1 ¼kg carrot , sliced
- 250g floury potato , diced
- 5 bay leaves (fresh or dried)
- 500g carton passata
- 750g cherry tomato
- 2 vegetable stock cubes
- 1 tbsp sugar (caster or granulated)
- 1 tbsp red wine vinegar
- 250ml whole milk
Method
Put the oil, onions and celery in your largest saucepan and cook gently until softened. Add the carrots and potatoes for a few mins, then add all the remaining ingredients, apart from the milk, with 1 litre water. Bring to a simmer. Cover and simmer for 30 mins, then uncover and simmer for 20-30 mins.
Fish out the bay leaves and whizz the soup with a hand blender. Add the milk and as much water as you need. Season to taste, warm through and serve with the Cheesy hot cross buns (see ‘goes well with’). Can be made and chilled up to 2 days ahead – or freeze for 1 month, then reheat gently.

Creative Soup Recipe: Creamy Carrot Apple Soup
We’re used to hearty soups and stews once temperatures start dropping and it’s sometimes difficult to veer away from those heavier dishes. However, we found an absolutely delicious soup alternative that’s warm and light, yet still filling. Carrots and apples in this soup marry perfectly together, and the ginger and spices make for an amazing flavor combination; you’ll wonder why you haven’t done more with the two of these ingredients together!
Carrot Apple Soup
Ingredients
- 1 1/2 pounds carrots, peeled and diced
- 1 large apple, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 3 1/2 cups vegetable or chicken broth
- 1/3 cup frozen apple juice concentrate, thawed
- 2 tablespoons fresh ginger, grated
- 2 tablespoons extra-virgin olive oil
- 1/4 teaspoon nutmeg
- 1/8 teaspoon allspice
- kosher salt and freshly ground pepper, to taste
Directions
- Heat olive oil in a large pot over medium-high heat and saute onion until softened and translucent. About 8 minutes.
- Reduce heat to medium-low, add minced garlic and fresh ginger and cook for another 2-3 minutes. Then add carrots and apple and cook until slightly softened. 6-7 minutes.
- Pour in vegetable broth and apple juice concentrate and bring mixture to a boil.
- Reduce heat and let simmer for 20-25 minutes, or until carrots and apples are tender.
- Season with nutmeg, allspice, salt and pepper.
- Using an immersion blender (or transferring to a blender), blend until smooth.
Note: if using a blender, pour soup in two batches, making sure there’s room for steam to escape through the top.

Tomato Basil Soup
Cozy up with a steaming bowl of homemade tomato basil soup! Made with fresh tomatoes and basil, this recipe is easy, nourishing, and delicious.
During the transition from summer to fall, there’s nothing I crave more than this tomato basil soup recipe. Apples and squash are starting to pop up at the farmers market, but you can still find ruby red tomatoes and bunches of basil mixed in among them. I’ll be eating these summer veggies for as long as they’re at the market, even as the temperature starts dropping and I find myself hungry for warming bowls of soup instead of salads.
So at this time of year, I start making this tomato basil soup. I roast a market haul of fresh tomatoes to concentrate their savory flavor. Then, I simmer them with aromatic veggies, thyme, and a splash of tangy balsamic vinegar. Last but not least, I blend it all together with a big handful of basil.
The resulting soup is totally vegan, but thanks to the blended veggies, it’s still creamy and comforting. The roasted tomatoes give it a rich umami flavor, and the basil adds a lovely fresh finish. If you can, make a double batch. Eat half hot off the stove with a gooey grilled cheese sandwich or hunk of crusty bread. Then, freeze the rest to enjoy on a fall or winter night when you’re longing for a taste of summer.
Tomato Basil Soup Recipe Ingredients
You only need a handful of ingredients to make this roasted tomato basil soup:
- Roma tomatoes – Just like in my homemade salsa recipe, the tomato variety you use here matters. If you can’t find roma tomatoes, substitute another variety of small plum tomatoes. Larger heirloom or salad tomatoes are too watery for this recipe.
- Onion and garlic – They add savory depth of flavor.
- Carrot – It makes this soup nice and creamy without any nuts or heavy cream.
- Balsamic vinegar – For tang!
- Thyme leaves – For fresh, aromatic flavor.
- Fresh basil – You can’t make tomato basil soup without it! I blend in the basil right at the end so that it keeps its fresh flavor and flecks the soup with green.
- Extra-virgin olive oil – It gives the soup body and richness.
- Vegetable broth – It creates the soup’s flavorful base.
- And sea salt and freshly ground black pepper – To make all the flavors pop!

How to Make Tomato Basil Soup
Making this tomato basil soup recipe is the perfect activity for a cool September afternoon. Your kitchen will fill with the scent of roasting tomatoes, simmering thyme, and fresh basil. Suffice it to say, when the soup’s done, you’ll be more than ready to eat.
First, roast the tomatoes. Slice them in half vertically and arrange them cut-side-up on a parchment-lined baking sheet. Drizzle them with olive oil and season them with salt and pepper. Then, roast them at 350° for an hour, until they’re still juicy but starting to shrivel.
Next, sauté the aromatics. Cook the onion, carrot, and garlic in a large pot over medium heat for about 8 minutes, or until they soften.
Then, simmer. Add the roasted tomatoes, broth, vinegar, and thyme leaves to the pot, bring to a boil, and simmer for 20 minutes to allow the flavors to develop.
Finally, blend! Allow the tomato basil soup to cool slightly. Transfer it to a blender and puree until smooth, working in batches if necessary. (Alternatively, use an immersion blender to puree the soup.) When the soup is smooth, add the basil leaves and pulse until just combined. Enjoy!
Tomato Basil Soup Serving Suggestions
When you’re ready to eat, garnish your tomato basil soup with fresh basil leaves. If you want to add something for crunch, pile on a few homemade croutons or roasted chickpeas. A drizzle of olive oil or some freshly grated Parmesan cheese would be delicious too.
Enjoy the soup with homemade focaccia or good crusty bread for lunch, or pair it with a sandwich, salad, or pasta for a heartier meal. Most often, Jack and I eat it with grilled cheese sandwiches, but it’d be great with a Caprese sandwich or avocado toast as well.
