Ham, Brie and Apple Sandwich
This easy recipe for a ham, Brie and apple sandwich takes the humble ham and cheese lunch to new heights with the combo of creamy Brie, sweet apple and ham!
Ladies and gentlemen, it’s HOT outside. I love my kitchen as much as the next girl, but at the end of a sultry afternoon I come home and look at the stove and I just…can’t…do it.
That’s when it is handy to have a nice pile of sandwich recipes in your back pocket. Recipes that involve dealing with only one large kitchen appliance, and that is the refrigerator.
If you can find it under all the magnets and pieces of paper.
Take the following out of your fridge: thin sliced ham. Really good Brie cheese (I am in love with a brie-like cheese called D’Affinios. If you can find it, give it a try…it will ruin all varieties of Brie for you for the rest of your life, but it will be worth it.)
Back to the fridge: you also need a nice crisp Granny Smith apple, some good bread (I used ciabatta bread for our sandwiches)…and here’s the kicker.
The secret ingredient.
The thing that elevates this ham sandwich above all other ham sandwiches…
I’m always a little fearful of chutney, to be perfectly honest. I’m just suspicious of all those sweet and sharp bits and pieces of things all lurking together there in the same jar, and you are never really sure about what all of them are, but in this case I don’t care, because it just WORKS.
I used the Stonewall Kitchen variety of mango chutney and that may have had something to do with it, because everything they make is pretty much perfection. But do whatever you need to do chutney-wise.
So tonight for dinner, just say no to the stove, and hello to ham sandwiches.

Ingredients
- 2 tablespoons of mango chutney (or the chutney of your choice)
- 2 slices of bread
- 2 ounces thinly sliced ham
- 2 ounces sliced Brie cheese
- 4 thin slices of a Granny Smith apple
Instructions
- Spread mango chutney on bread slices.
- Layer ham, cheese and apple on bread, top with second piece of bread, and enjoy!

Oh this looks so good!
I will make this, I have to make do with local products but they do have mango chutney here.
When we lived there, I always bought Major Greys Mango Chutney.

Yum! I’ve had grilled cheddar, ham and apple sandwiches, but I would never think to put brie on a cold sandwich. I will definitely try it!

Wow, that looks really yummy! I’d definitely give it a go. I have about half a pound leftover ham in the fridge. You see, I love making ham myself, I really enjoy it. So having ham in the fridge is pretty normal in our house, lol!

I love this flavor combination. When it is less hot out, I recommend making a calzone with proscuitto, brie, apple and a bit of sage. I made it this past fall when I had WAY too many apples for apple picking and it was really tasty!

Ingredients
- 1 large baguette, cut into fourths or 8 slices rye bread
- 7 ounces Brie cheese, thinly sliced
- 1 ½ New York State CRISPIN apples, cored and thinly sliced
- 2 Tablespoons olive oil
- ¾ lb deli ham, sliced into ½ inch strips
- 2 Tablespoons whole grain mustard
- 1 Tablespoon honey
- 1 teaspoon fresh thyme, chopped
- ¼ teaspoon salt
- 1 teaspoon fresh black pepper
- (Optional) 2 strips cooked bacon
Instructions
- Preheat oven to 425° F. Slice baguette pieces lengthwise and top one half with brie slices and the other with a drizzle of olive oil and salt and pepper on top. Bake for 5 minutes on a tin foil-lined baking sheet, or until cheese melts and beings to brown.
- Meanwhile, heat olive oil over medium-high heat in a medium sauté pan. Add the apples and cook until apples begin to soften and color (about 6 minutes), stirring every 2 minutes.
- Add ham, whole grain mustard, honey, and thyme to apples and toss until ingredients are well incorporated and thoroughly warmed.
- Divide ham and apple mixture evenly onto toasted baguettes and top with a slice of cooked bacon if desired. Serve warm with a refreshing glass of New York apple cider!

Oven-Toasted Ham, Brie and Apple Sandwiches
To give this sandwich a substantial main-course feel, look for a thinly sliced ham steak rather than deli ham for a meaty flavor and texture. Creamy brie and crunchy tart-sweet apples complement the robust ham.
This recipe is excerpted from Big Buy Cooking.
Ingredients
- 1 large baguette (about 1 lb.), cut into 4 pieces
- 7 oz. brie, most of the rind trimmed off and thinly sliced (trim and slice the brie while it’s cold)
- 2 Tbs. unsalted butter
- 1-1/2 medium Granny Smith apples, cored, and cut into 1/4-inch-thick wedges (about 1-1/2 cups)
- 3/4 lb. ham steak, thinly sliced on the diagonal
- 2 Tbs. whole-grain Dijon mustard
- 1 Tbs. honey
- 1 tsp. chopped fresh thyme
Preparation
- Position a rack in the center of the oven and heat the oven to 425°F. Split the baguette pieces lengthwise, open them up like a book, and top one side with the brie. Set on a baking sheet lined with parchment paper or aluminum foil, and bake until the cheese melts and the bread lightly browns, about 5 minutes.
- Meanwhile, melt the butter in a large (12-inch) heavy-duty skillet over medium-high heat. Add the apples and cook, tossing every minute or so, until they start to soften and brown in places, 3 to 4 minutes. Add the ham and cook, gently tossing, until it warms. Remove from the heat and gently toss with the mustard, honey, and thyme until the ham and apples are evenly coated. Using tongs, distribute the ham mixture into the warm pieces of baguette, secure with 2 toothpicks, cut in half, and serve.
Look for a ham steak that’s labeled “ham in natural juices.”

A great quick supper choice, nice fall flavours. The sandwich will only be as good as the ingredients, so choose the best. I used ciabatta and triple cream brie. would never cut the rind off brie, you lose half the cheese, what a waste! Didn’t have any fresh thyme so did without, but I do think it would have enhanced the flavours. Would work with lots of other cheeses as well. The suggestion to serving with pancakes was just weird.
Sandwich looks great. I am not sure you would add potato pancakes to a sandwich meal. I think you need a salad or a veg!
