Whenever I make dessert for myself and my family, I usually wind up making a huge mess with all of my pots, pans, and baking dishes. It’s definitely not as fun eating special treats when you know you have to clean up afterwards. After countless baking sessions that left my kitchen looking like a construction zone, I decided to dig up a list of easy, no-bake apple desserts (because apples are the best fruit ever, duh). Интересный и необычный десерт, который особенно оценят сторонники здорового питания и всего полезного, ведь основные ингредиенты здесь яблоки, финики и орехи! Ничего не нужно выпекать, просто заморозить! Идеально в жару, хорошо освежает! Можно делать порционно, так удобней всего, или в небольшой форме (18-20 см), дно и бортики застелить бумагой для выпечки, если силиконовая, то не нужно.

Рецепт: (у меня 8 больших порций)

200 г фиников с косточкой, у меня 17 штук (разделить на две части: основа и начинка)
200 г орехов (у меня миндаль+грецкие, можно что-то одно)
1 ст. л. воды при необходимости
2 средних яблока твердых сортов (типа Грэнни, Гала, Семиренко)
1 ст. л. лимонного сока
2 ст. л. изюма или сушеной клюквы (по желанию)
½ ч. л. корицы
1 ст. л. меда (при необходимости)

1) Орехи промыть и подсушить в духовке

8-10 минут при 170-180 градусах.
2) Финики хорошо промыть теплой водой, вынуть косточки, разделить на две части. Ту, что для начинки залить чистой водой и оставить, чтобы размокли.
3) Основа: В блендер положить орехи, измельчить в крошку, добавить половину фиников и еще раз хорошо промешать до однородной массы. Чтобы процесс шел легче, можно добавить столовую ложку чистой воды.
4) Форму для кексов выстелить бумажными капсулами, распределить начинку, так чтобы получились бортики.
5) Начинка: слить воду у замоченных фиников, измельчить в блендере. Яблоки очистить и нарезать мелкими кубиками. Сбрызнуть лимонным соком, чтобы не потемнели. По желанию добавить пару столовых ложек изюма или сушеной клюквы (предварительно промыть, залить горячей водой на 5 минут, затем промокнуть салфеткой). Добавить корицу и финиковую пасту, хорошо перемешать. Если яблоки кислые, добавить столовую ложку меда.
Разложить начинку по формочкам и хорошо утрамбовать (возможно, останется немного начинки, ее можно съесть просто так)) Обернуть пищевой пленкой и убрать в морозильник на 1-2 часа!
Такой десерт можно хранить в заморозке до 2х месяцев. Достать за 10 минут до подачи, чтобы немного оттаял.

Recipe: 8-10 servings

17-18 dates, divided in two parts: crust and filling))
200 g toasted almonds/walnuts (you can use just one kind)
1 tbsp water if needed
2 medium crisp apples like Granny Smith or Gala
1 tbsp lemon juice
2 tbsp raisins or dried cranberry, optional (soaked in hot water for 5 minutes)
½ tsp cinnamon
1 tbsp honey if needed
Freeze for at least 2 hours
Allow to thaw 10 minutes before serving. Store in the freezer for up to two months.
