A moist and delicious apple breakfast cake topped with a simple brown sugar crumb topping. This Apple Coffee Cake is the perfect breakfast or dessert for fall!
When it comes to baking, apples and pumpkin have to be two of my favorite ingredients. Not only do they taste delicious, but they add incredible moisture to baked goods too. When I put out a poll on Instagram, I had an overwhelming response to create an apple coffee cake recipe. And let me tell you, this one is delicious.
This coffee cake is made from scratch, but don’t let that intimidate you! This recipe requires a little extra work since it has a crumb topping, but i t’s worth it . You can even throw in some additional spices or add walnuts to the cake batter.
Plus, any dessert that can double as breakfast is always a winner in my book.
Recipe Ingredients
This apple streusel coffee cake features a moist apple cake and a crumbly streusel topping. Here’s what you will need to make this cake:
- All-purpose flour: Spoon and level the flour when measuring it so your apple streusel coffee cake doesn’t turn out dense.
- Baking powder and baking soda: Helps the cake rise in the oven.
- Salt: Balances out the sweetness of the batter and enhances the apple flavor.
- Ground cinnamon and nutmeg: I added some cinnamon and nutmeg to this cake for a little extra flavor, but it’s not overpowering so feel free to add more to fit your personal taste.
- Unsalted butter: I recommend using unsalted butter since the amount of salt in salted butters can vary between different brands
- Sugar: I used both granulated sugar and brown sugar in this apple streusel coffee cake recipe. The brown sugar pairs perfectly with the apples and adds flavor too.
- Eggs: Need to be at room temperature before being added to the batter.
- Vanilla extract: Use pure vanilla extract for the best flavor.
- Buttermilk: If you don’t have buttermilk on hand, you can easily make your own buttermilk substitute.
- Apple: Honeycrisp, Granny Smith, and Braeburn apples are all good options.
How to Make Apple Coffee Cake
To make this apple cinnamon coffee cake, you’ll start out by mixing up the crumb topping which is just a simple mixture of flour, brown sugar, cinnamon, and cold cubed butter. I prefer to use cold butter when it comes to the crumb topping, so a pastry cutter really helps with this step.
If you don’t have a pastry cutter, then you can use a fork or your hands to work the butter into the dry ingredients. Once the mixture starts to come together and is crumbly, place it in the refrigerator to keep it cold while you mix up the cake batter.
The apple cake batter starts out by mixing together the all-purpose flour, baking powder, baking soda, and spices. For the wet ingredients, you’ll start with the butter, granulated sugar, and brown sugar. For this step, you want to use room temperature butter and beat the sugar into it for about 4 to 5 minutes or until it’s light and fluffy. This step helps to incorporate more air into your cake batter which makes for a lighter, softer cake.
Then, mix in a couple of eggs and the vanilla extract. Once everything is well combined, you’ll alternate mixing in the dry ingredients in three additions along with the buttermilk. In other words, mix in 1/3 of the dry ingredients, half of the buttermilk, 1/3 of the dry ingredients, the remaining half of the buttermilk, and the last 1/3 of the dry ingredients. Alternating the dry ingredients with the buttermilk helps to prevent over mixing your cake batter and keeps your cake nice and soft.
Once the cake batter is mixed up, just pour it into a pan, sprinkle the crumb topping on top, and bake it. I do suggest using a springform pan for this cake because it’s much easier to remove it from the pan.
You can either leave this cake plain, dust it with some powdered sugar, or add a simple vanilla glaze.
How Long Does Apple Cinnamon Coffee Cake Last?
This apple streusel coffee cake is best served the same day it is prepared, but it may be covered tightly and stored at room temperature or in the refrigerator for 2 to 3 days.
Can I Freeze This Cake?
Yes, this cake will freeze well for up to 3 months. Thaw to room temperature before serving.

2 Ingredient Healthy No Bake Apple Cake (No White Flour, Butter, Eggs or Refined Sugar)
Easy apple cake bars that are just two ingredients and don’t require any baking or cooking! These cake bars also don’t contain any wheat flour, butter, oil, eggs or refined sugar. The cake bars are sweet, moist and make a great snack.
I love making no bake desserts. They are perfect when I’m tired and busy and don’t have time for a traditional baked dessert. These cake bars take only about 5 minutes to prepare. They are sweet and moist and taste like cake balls in cake bar form.
Ingredients
Applesauce
You can use sweetened or unsweetened. I used unsweetened. The cake bars were still sweet enough for me using unsweetened applesauce. Of course, if you want something sweeter, you can use sweetened applesauce (thought most sweetened applesauce contains refined sugar). You can also use either homemade applesauce or store bought applesauce.
If you are looking to use a different fruit, I’ve also made a banana version that I really love.
Coconut Flour
Coconut flour is used in this recipe to provide the flour element for the cake. Coconut flour is made from coconut flesh that is dried and than ground into a powder, creating a consistency very similar to flour. Coconut flour is highly absorbent which is why it works for this recipe. It will absorb a lot of the moisture from the applesauce and soften and expand, creating a cake-like texture. It also is naturally sweet so it won’t cut into the sweetness of the apple cake. If you do not like the taste of coconut, then this recipe may not be for you. You do taste the coconut in coconut flour, though it is mild. It adds a little bit of a tropical flavor to this cake.
I’ve had success buying coconut flour at most of my local grocery stores, usually located in the baking aisle. They come in small bags located with other specialty flour substitutes. I usually buy mine from Whole Foods or on Amazon.
Homemade Applesauce
I prefer making these cake bars with homemade applesauce but you can definitely use store bought applesauce. I like using homemade because I make mine thicker and slightly chunkier, which gives these bars more apple flavor. I found when I used the store bought applesauce, I could still taste the apple flavor but it wasn’t as strong.
I’ve never shared my recipe for homemade applesauce because it’s pretty basic. Peel, core and slice your apples. Boil the apple slices in water until they are very soft. Drain from water and then mash the apples by hand, in a food processor, or a blender until the applesauce reaches your desired consistency. If your applesauce is too thick, you can add a little water. If your apples are not very sweet, you can add sugar to the mixture but I always choose sweet apple varieties so I don’t add additional sugar to my applesauce.
Texture of No Bake Apple Cake
This cake will not taste like your traditional fluffy baked cake. It is a no bake cake so the texture is different. To me, it tastes similar to cake but is much more moist. It reminds me of cake balls (which is usually made from cake pieces and frosting mashed together).
Baked Version
While you don’t need to bake this cake, you can if you want. The cake will taste the same but baking it will remove some of the moister and make the bars firmer. So if you find the no bake version too moist for your liking, you can bake it for a firmer and less moist cake.
Frosting Options
You can definitely leave these cake bars unfrosted and eat them as is, but if you are someone who enjoys frosting then I have a few easy frosting ideas for this cake:
- Whipped Cream Frosting: Beat cold heavy cream and a little bit of sweetener of your choice on high speed with a mixer until stiff peaks form. You can also add a little cinnamon for a cinnamon flavored frosting which pairs well with apples.
- Healthier Cream Cheese Frosting: Softened cream cheese, Greek yogurt and sweetener of your choice (I use maple syrup to keep it refined sugar free). Whisk together until evenly combined. You can also add 1/4 tsp cinnamon for a cinnamon cream cheese frosting. This is the frosting I used for the cake in the photos and you can find the full recipe here.
- Cinnamon Sugar Topping: You can also sprinkle cinnamon sugar over the top of these bars instead of a frosting. You can mix cinnamon with coconut sugar if you are trying to stay away from refined sugars.

- Put the crumble in the prepared baking tin & chill it for some time in the fridge.
- Once chilled, bake it at 170°C for about 20-25 minutes or till its golden brown from top. Take it out & let it cool in the baking tin itself.
- Note: This will be our base layer.

- Now, add in soft butter, Nestlé MILKMAID, water, vanilla essence & grated apple. Whisk everything together till its lumps free.

- Take it out of the oven & after 2-3 minutes demould it.
- Place the cake on a platter or cake board.

- Carefully open the lid of the Nestlé MILKMAID, and the Dulche de Leche is ready.
- Mix coffee & hot water to dilute the coffee powder.
- Take about ½ cup of Dulche de Leche, and with the help of beater just whip it a little.
- Now add ½ cup or more of whipped cream to Dulche de Leche and fold in with the spatula.
- Add in diluted coffee & mix it well.
- The frosting is ready to be used.
- Spread a layer of frosting on top of the cake & garnish it with fresh flowers or apple slices or anything you wish to.
- Note: You can adjust the sweetness of the frosting by adding more or less of whipped cream in it.
