Orange and apple chicken

Приготовил китайского «апельсинового» цыпленка

С американской версией китайской кухни я познакомился в 1992 году, в аэропорту Атланты, где в ожидании пересадки меня накормили в Panda Express. С тех пор я перепробовал много всего интересного из гастрономического многообразия Китая, но пандаэкспрессовский «Orange chicken» так и остался в списке моих любимых блюд.

А недавно мне на глаза попалось видео от Jimmy Wang, одного из директоров Panda Express, где он за три минут смастерил того самого «апельсинового» цыплёнка. Устоять было невозможно. Сбегал в магазин, все купил, и . убив три часа, наконец-то, приготовил то самое блюдо.

Ниже о том, как все это было:

1. Нарезаем 1 кг. темного куриного мяса достаточно крупными кубиками.

2. В глубокой миске смешиваем 1 ст.л. соли, 1 ч.л. белого перца, 120 гр. кукурузного крахмала, 360 гр. муки.

3. Затем добавляем 1 яйцо, 1 стакан воды, 2 ч.л. растительного масла, перемешиваем, так чтобы не было комков, опускаем в смесь цыплёнка, ещё раз все перемешиваем и отправляем в холодильник на 30 мин.

4. Разогреваем в глубокой сковороде растительное масло до 180 С и партиями (примерно 15-20 кубиков) обжариваем цыплёнка минимум 6 минут.

5. В отдельной сковороде на среднем огне обжариваем в 1 ст.л. растительного масла 1/4 ч.л. сухого перца чили, 1/2 ч.л. измельчённого свежего имбиря, 1 ст.л. измельчённого чеснока. Добавляем 60 гр. сахара и 30 гр. коричневого сахара, перемешиваем.

6. Вливаем 1/2 стакана апельсинового сока и 1/3 стакана столового уксуса (но я использовал яблочный), доводим до кипения и добавляем 2 ст.л. соевого соуса.

7. Отдельно смешиваем 2 ст.л. воды и 2 ст.л. кукурузного крахмала, и тоже добавляем в сковороду с кипящим соусом.

8. Убавляем огонь и готовим соус пока он не загустеет, после чего опускаем в него цыплёнка и перемешиваем.

9. Перед подачей добавляем 1 ч.л. кунжутного масла, перемешиваем и отправляем на тарелку.

Как я уже подметил, рецепт не шибко простой, и, лично у меня, он занял три часа, но зато результат порадовал.

APPLE AND ORANGE CHICKEN This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Tillman Estate in Longview, Texas in 1982.

• 1 ounce package dry onion soup mixshopping list
• 4 chicken breastsshopping list
• 1 ounce envelope dry cream of chicken soup mix shopping list
• 2 tablespoons soy sauceshopping list

• 1 cup apple juiceshopping list

How to make it

• Preheat oven to 350.
• Place chicken pieces in a lightly greased rectangular baking dish.
• In medium bowl combine soup mixes, soy sauce, garlic, apple and orange juice, salt and pepper.
• Mix together and pour mixture over chicken then cover and bake 1 hour.
• Remove cover and bake 30 minutes longer to brown the chicken.

Apple and Orange Chicken

Apple and Orange Chicken is a simple recipe that uses apples and oranges to add amazing flavors as well as nutritional value. How to make Apple and Orange Chicken

• Preheat the oven to 175°C. Arrange the chicken pieces in the baking dish (9 x 13 in) which has been lightly greased.
• Add the cream of chicken soup mix, onion soup mix, garlic, soy sauce, orange and apple juice, pepper, and salt. Mix them all together and add to the chicken.
• Cover and bake the chicken for about 1 hour. Remove the lid and bake again for ½ hour until the chicken turns brown.

Apple and Orange Chicken can be cooked evenly by using an aluminum foil which will also help keep the food moist.
