Apple Cinnamon first appears in the season three episode Apple Family Reunion. He attends the reunion with other Apple family members, arriving with Gala Appleby and Wensley by airship. When a disastrous family hayride causes the Sweet Apple Acres barn to be destroyed, Apple Cinnamon takes part in the barn’s reconstruction during Raise This Barn. He also appears in the family photo in front of the rebuilt barn.

Season four

In Filli Vanilli, Apple Cinnamon appears as a spectator of the Ponyville turkey call competition. He later appears walking toward Flim and Flam’s tent at the beginning of Leap of Faith and at the Rainbow Falls Traders Exchange in Trade Ya!

Season five

In Bloom & Gloom, Apple Cinnamon appears in a photo during one of Apple Bloom’s nightmares. In Appleoosa’s Most Wanted, Apple Cinnamon, together with Bushel, Florina Tart, and Candy Apples, appears as a member of Applejack’s team during the Appleloosa rodeo’s hay bale stacking event. In Brotherhooves Social, Apple Cinnamon appears walking into a tent during Apple Bloom and «Orchard Blossom’s» Sisterhooves cheer.

In Sparkle’s Seven, Apple Cinnamon appears in Applejack’s Apple Chord fantasy cheering for Apple Chord in the background with Perfect Pie and Apple Bumpkin after she performs on a stage at Sweet Apple Acres. In The Summer Sun Setback, he appears as one of the Earth ponies in charge of food during preparations for the final Summer Sun Celebration in Canterlot as a weakened Braeburn warns the other ponies to get away from the food. He subsequently appears carrying a weakened Apple Honey as the Earth ponies evacuate the food area.

Cinnamon Apple Crumb Cake

Are you ready for fall baking? Cinnamon Apple Crumb Cake is the perfect dessert for crisp weather coming up, just like this Caramel Apple Cinnamon Roll Lasagna. But, if you are not a big fan of pumpkin treat, then you must try this coffee cake loaded with apples and crunchy brown sugar-cinnamon streusel crumbs, drizzled with apple cider glaze.

Being a food blogger is not such a simple thing as many of my friends think it is. This time I’m not talking about the usual problems that happen in the kitchen like an unsuccessful frosting of a perfectly backed cupcake or the filling is thin for the 1000. time even though you did everything by the book.

But I’m talking about is the reputation that doesn’t allow you any mistakes. And my friends, sitting with a dessert, usually say “Oh, Vera, this is simply fantastic! And you always succeed in everything you try. But I could never do that, and so it’s better that I come to your place for a sweet bite like this”

A few days ago, answering the phone, I heard my best friend: “Vera, when do you have time for me? I have something very important to tell you! I’ll be there in a few hours. And please, make one of your sweet desserts so we could eat something sweet while talking”. And – click, that was it.

If I had the phone number, I would surely have called Superman because I knew what was coming to me! First, searching on Pinterest. Cheesecake, Cupcakes, Cookies?Nooo, maybe this quick Poke Cake? Hmmm these Apple Muffins look fantastic, too. After an “easy” 45 minutes, the decision was made – Cinnamon Apple Crumb Cake!

And even though it all looks so simple, there are a few completely logical questions: “Have I used all the apples on Apple Cookies?”. Of course, then I had to spend 30 minutes in the shop for buying a few apples. After two hours, luckily without any new problems, Apple Crumb Cake began to spread it’s smell through my home, and I remembered my blog.

Well, it wouldn’t be bad to make a photo of this beautiful coffee cake. And of course, as is common in situations like this, the display was showing the (in)famous message “Change the battery”. 30 more minutes for charging the battery and as soon as the photo session was over, I got the SMS “I’m coming in 20 minutes”. Just enough for washing the dishes, too.

And so, 30 minutes later, talking about the newest gossip and enjoying the Cinnamon Apple Crumb Cake, came the usual “Vera, you really are a genius. Only you can make such a sweet cake without any problems. You have to give me the secret one day”.

“Well, it’s really nothing, my dear. You can do it. All you need is a little good will and things are done by themselves!” 🙂

Apple and Cinnamon Muffins

There are few things I find more satisfying in the kitchen than using up produce: the very notion of waste sends shivers down my spine. So, when I noticed a couple of apples wilting in the fruit bowl, I seized the opportunity to use them up. The result: these fruity, cinnamon-spiced, almond-topped muffins. I like to use spelt flour, with its rough-hewn nuttiness, here but you can use regular plain flour instead; the muffins won’t have the same wholesome heft, but there’s nothing wrong with a lighter-crumb either.

For US cup measures, use the toggle at the top of the ingredients list.

Ingredients

Makes: 12 muffins

  • 2 eating apples
  • 250 grams spelt flour (or use plain/all-purpose flour if you prefer)
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 125 grams light brown sugar plus 4 teaspoons for sprinkling
  • 125 millilitres honey
  • 60 millilitres runny natural yogurt
  • 125 millilitres flavourless vegetable oil
  • 2 eggs
  • 75 grams natural almonds (unblanched)
  • 2 eating apples
  • 1¾ cups spelt flour (or use plain/all-purpose flour if you prefer)
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • ⅔ cup light brown sugar plus 4 teaspoons for sprinkling
  • ½ cup honey
  • ¼ cup runny natural yogurt
  • ½ cup flavourless vegetable oil
  • 2 eggs
  • ½ cup raw almonds (unblanched)

Method

  1. Preheat the oven to 200°C/180°C Fan/gas mark 6/400°F and line a 12-bun muffin tin with papers.
  2. Peel and core the apples, then chop into small dice (about 1cm / ¼ in, but please don’t measure) and put them to one side.
  3. Measure the flour, baking powder, and 1 teaspoon of the ground cinnamon into a bowl.
  4. Whisk together the 125g / 2/3 cup brown sugar, the honey, yogurt, vegetable oil and eggs in another bowl or jug.
  5. Chop the almonds roughly and add half of them to the flour mixture, and put the other half into a small bowl with the second teaspoon of ground cinnamon and the 4 extra teaspoons brown sugar. This will make the topping for the muffins.
  6. Now fold the wet ingredients into the dry. Add the chopped apple, and stir to combine but don’t over mix. To remind you: a lumpy batter makes for a lighter muffin.
  7. Spoon this bumpy batter into the muffin papers, then sprinkle the rubbly topping mixture over them.
  8. Pop the tin into the preheated oven, and bake for about 20 minutes, by which time they will have risen and become golden.
  9. Take the tin out of the oven and let it stand for about 5 minutes before gingerly taking out the muffins and placing them on a wire cooling rack.
