Chicken Apple Sausage Skillet with Cabbage and Potatoes
Chicken Apple Sausage Skillet is a healthier spin on kielbasa and cabbage. This easy one-pan meal is full of flavor, loaded with veggies, and has a fantastic sauce made from Dijon mustard, white wine, and apple juice. I teamed up with Maille to bring you this post.

I love creating delicious, quick, and easy one-pan recipes. The secret to these dishes is developing as much flavor as possible in as little time.
This Chicken Apple Sausage Skillet is my take on a healthier kielbasa and cabbage dish.
I love this recipe. It reminds me of something I would order at a German beer hall, or something my Irish grandma would make.
It would also be perfect for St. Patrick’s Day next month!
This Chicken Apple Sausage Skillet is made with rainbow fingerling potatoes, cabbage, onion, carrots, and fresh parsley.
A rich and flavorful, but still light, pan sauce comes together quickly. White wine, chicken stock, apple juice, caraway seeds, and Dijon mustard form the foundation for a creamy sauce that is a great balance of sweet and savory.
For the mustard, I use Maille Dijon Originale Mustard, which is the real star of this dish. This traditional mustard dates back to 1747 when Maille was founded, and is the creamiest Dijon I’ve found.
The skillet is healthy, hearty, gluten-free, and will be on your table in under 30 minutes.

Sausage, Potato, and Cabbage Soup
A thick and hearty sausage, potato, and cabbage soup; a healthy recipe that is packed with flavorful ingredients!
Growing up my dad went through a phase where he wanted us kids to eat cabbage in some form every single day. He’d read something about the health benefits of cabbage and I’m certain he thought he could prevent us ever getting sick if we ate it constantly.
So he really did prepare cabbage in just about every way imaginable. We complained a lot at first, but over time we eventually got used to the taste.
The first time we ever ate cabbage willingly was in a soup very similar to this. One packed with veggies, red potatoes, ground beef, and Italian seasonings. His cabbage and red potato soup was a major hit with my family and I have actually been a cabbage fan ever since!
How do you make this Sausage, Potato, and Cabbage Soup?
- Start by prepping all of the veggies you’ll add to this soup. There are quite a bit of veggies that get a coarse chop: celery, carrots, onion, red potatoes, and cabbage. If you want to cut down on prep time find a pre-chopped mirepoix (celery, carrots, and onion) in the produce section of your local grocery store.
- Next, cook the sausage in a little bit of olive oil . I use turkey sausage to make this soup healthier but it’s okay to use other types to your liking. I slice the sausage in rounds, but chopping it up into smaller pieces is a great option too. Once the sausage is cooked, remove it to a plate lined with paper towel to absorb some of that excess oil.
- Now it’s time to add in all those veggies you chopped . I use a little bit of oil + butter to saute the veggies in. Start with the onion, carrot, and celery. Once those are cooked down a bit add in some garlic. Lastly it’s time to add the cabbage. It’s going to feel like you’re adding way too much cabbage to the dish, but it cooks down a lot and it really is the base ingredient in the soup. I also add in some tomatoes — we love getting fire-roasted tomatoes from the grocery store because there is so much more flavor. Add in the seasonings, potatoes, the sausage you cooked earlier, and finally the stock.
- And now it’s hands-off for a bit! While that soup is simmering you can make some easy sides to go along with the soup. Our favorites: this salad and some crusty sourdough bread!

I have posted many simple recipes on my blog over the years, but this one could possibly be one of the simplest. It’s a one dish meal of sausage, potatoes, onions, and cabbage. If you can use a knife to spend five minutes to cut a few vegetables, then you can definitely make this meal. It’s a perfect meal on a weeknight when you have chores to accomplish, homework to help the kids with, or you just want to spend some time flopping on the couch when you’ve pushed yourself to the limit for the day. Yeah we all have days like that.
Motivation to cook is just not there. You don’t have it in you to stand over the stove and sauté anything. You can’t bare the thought of washing multiple dishes. You’re just done.
That was me a few days ago. I was tapped out. I was done.
Dinner still need to be made though. Why do they have to eat three times a day? Normally I would consider caving and go out to eat, but my hubby was gone and my youngest wasn’t feeling well so mama had to plow through. Out of necessity, I came up with this simple little dish and everyone was happy and fed. No it’s not my most prized meal that I’ve ever made. No it’s not gourmet. No it won’t win any culinary awards. No it doesn’t even really require a recipe.
Yes it was tasty. Yes it was nutritious. Yes it was filling. Yes we all happily ate. Yes it was easy and took very little hands on time. I call that a win. Most of the time when I make meals like this I think they aren’t worthy to publish, but then I remember that you are regular people just like me and may need a little inspiration for when you just need to get dinner on the table with as little work as possible.

There is almost no simpler soup to make than a Polish sausage , cabbage and potato soup and it’s the kind of soup that I grew up on. Soup with onions, cabbage and kielbasa, with some potatoes thrown in is the staple in many a Polish or Ukrainian household. Again, you cooked with what you had on hand, and these were foods that were always available.
What type of sausage should I use?
You can use any type of sausage that you enjoy the taste of. Ham sausage, Farmer’s sausage or kielbasa, all that matters is that it’s a smoked sausage and not a raw sausage! This soup only works with smoked sausage.

Tips and Tricks for Making Polish Sausage, Cabbage and Potato Soup
- Do not increase the broth, the cabbage is going to release a lot of liquid while cooking! This is going to look thick, and like it won’t end up being soup, but trust the cabbage!
- You can change up the vegetables, leave out the carrots and potatoes if you are looking for a more low-carb soup – trust me, it will still be amazing with only the cabbage and sausage!
