Apple Strawberry Coffee Cake Recipe

You need this apple strawberry coffee cake recipe in your life! It is very easy to put together and will be an instant hit with your friends and family.

Let me describe this coffee cake to you. The sponge cake itself is very, very moist and the fruit bits that are inside it burst with flavor with each bite. If you’ve been following my blog, you know that the combination of apples and strawberries is a match made in heaven for me. Once you try this cake, you will know why!

I also like to slightly pre-cook apples for this particular recipe. I like that the apples lose some of their crunchiness and become pleasantly soft when eating it. This method will also add to the overall moistness of the cake.

One downside of this apple strawberry coffee cake is that it is quite addictive! I will be lying to you if I say one cup of coffee or one slice of this cake will be enough. It certainly is not for me and that’s how I get in trouble.

Ingredients:

  • 2 small OR 1 large apple (please follow the proportions)
  • 200 grams (10 oz) strawberries
  • 400 grams (2 cups) of flour
  • 3 medium eggs
  • 3/4 cup granulated sugar
  • 1/4 cup melted butter
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 tsp baking powder
  • pinch of salt
  • 1 tsp vanilla sugar or 1 tsp vanilla extract

For apples:

  • 2 tsp butter
  • 1 Tbsp granulated sugar
  • 1/8 tsp cinnamon (a couple of pinches, really)

Directions:

Wash, cut in half, core the apples. Slice the apple halves in half moons that are about 1/8 inches thick.

In a small skillet melt 2 tsp butter and place the apples in there. Keep the heat at medium-low. Add 1 Tbsp sugar and give the apples a mix. The apple slices will start releasing some water and slowly cook down. Make sure not to burn them. If the heat is a little too high, by all means, lower it. The entire process should take about 8 minutes.

*HINT: Cooking apples do not need supervision. You can start cutting the strawberries while the apples are cooking.

Once the apples have cooked down some (5-6 minutes), add cinnamon and stir the apples gently. At this point, you want to be careful with the apple slices since they are a little fragile. Cook for another 2 minutes and turn the heat off.

Wash, dry, remove the green parts and quarter the strawberries.

In a medium bowl whisk eggs with 3/4 cup of sugar. Whisk until eggs turn pale yellow and mixture thicken a bit.

Add sour cream, melted butter (room temperature), milk and vanilla into the egg mixture. Give it a whisk on low speed until everything is incorporated well.

Add flour into the bowl, add salt and baking powder on top. On low speed of the mixer whisk the batter until flour is incorporated and the mixture becomes smooth.

Both the strawberries and apple slices will be used in 1/2 batches, including the batter. Visually dividing them into two will be enough.

PRE-HEAT THE OVEN at 360F

Line a 10-inch springform pan with parchment paper. Add half the batter into the pan, spread half of the apple slices and half of the strawberries on top of the batter.

Pour over the rest of the batter on top of the layered fruits. Artfully and evenly spread the rest of the fruits on top of the batter. Well, doesn’t have to be super artful 🙂 Whatever rocks your boat at that moment.

Bake the cake in the heated oven for about 45-50 minutes. If you are noticing that the top of the cake might be getting too dark for your liking, place an aluminum paper on top of the cake towards the end of the baking process. This will ensure that the cake is not burning, but the inside of it is getting an even bake.

Once you take the cake out of the oven, please let it cool for about 15-20 minutes before you decide to cut into it. Decorate with a little confectioners sugar and awe your guests or your own stomach 😀

Gluten-Free Strawberry Apple Cake

I am super excited to share this Gluten-Free Strawberry Apple Cake recipe with you today. I must say this gluten-free cake turned out better than I expected. The base is a buttery crust, and the middle layer is made with strawberries and apples in a light sponge-like cake flavoured with cinnamon, lemon and vanilla.

And for the topping, a light layer of candied nuts, adding a crunchy texture to this incredibly delicious cake!

♥ How to make a gluten-free strawberry apple cake.

You will love the recipe…why? The recipe is super easy, even though you are working with three layers. First, the base is a mixture of butter, coconut sugar, two flours and baking soda. The dough is pressed to the bottom of your springform pan and baked for fifteen minutes.

While the crust is baking, make the second layer. This layer is even easier 🙂 First, you whip the eggs with coconut sugar, lemon juice, vanilla, cinnamon and salt. Stir in flour and then fold in the fruit. This mixture is poured over the hot crust and then topped with a mix of nuts, butter and coconut sugar. Bake and done!

This strawberry apple cake recipe is super easy to make and with exceptional results. I often serve this gluten-free cake for brunch. For dessert, I sometimes add vanilla ice cream or whipped cream.

However, in my home, this strawberry apple cake is often snacked on. After all, it is filled with fresh fruit so there are some health benefits 🙂

♥ Do you have to use a springform pan?

The quick answer is no! You can use any cake pan or pie plate of a similar size. Line the pan with parchment paper making it easier to lift the cake out when it’s done. I like to leave some paper hanging out of the pan to make it easier to lift.

♥ Does it make a difference which gluten-free flour blend you use?

In this recipe, you can use almost any gluten-free flour blend that has xanthan gum. The only exception I would say would be one that has bean flours in the blend. I never use a gluten-free flour blend that includes a bean flour.

This is for two reasons. One, the cakes tend to be heavier, and the other is I’m not too fond of the taste. But if this is the only gluten-free flour blend you have, you can still use it.

I wanted to make this gluten-free strawberry apple cake recipe with simple pantry ingredients, making this recipe easy for anyone to make. Using basic ingredients like butter, sugar, eggs, baking soda, vanilla, and fresh fruit most of us have in our pantry.

For the flour, I used a good basic gluten-free flour blend, and I added 1/2 cup of almond flour. The almond flour gives the crust a buttery good crust texture. If you don’t have almond flour, you can use certified gluten-free oat flour. Both will work.

Browned Butter Apple Strawberry Cake

Happy New Year, everybody! We’re starting 2019 with cake, as is appropriate. And we’re using the best of winter fruits all at once, juicy strawberries and crunchy apples. Things are looking gooooooood.

This is based off a Butter and Brioche recipe for an olive oil cake with ground almonds. Browned butter is suggested as an alternative to oil and I couldn’t get that idea out of my mind. Together, that and the almonds make a cake that’s so packed with flavour, you’ll want to only ever make cakes this way from hereon. I chose to add strawberries to the topping, and dice up the fruits for a little more ‘bite’.

I tossed the fruit in a wee bit of powdered sugar and reduce the sugar in the actual cake batter and I felt it was perfectly balanced. The cake has a toasty, nutty flavour from the browned butter and while the almonds make it denser than a regular flour cake, it is moist, tender and super soft.

You can certainly fold the fruits into the batter itself, but I preferred the cake to be basic and the fruits to form a topping instead. I also find they tend to create small moist patches within the cake, which is unavoidable, so this time I decided to just keep things simple.

Sliced almonds add a bit of extra crunch and texture with the soft, jammy fruit. A little bit of lemon or orange zest would be great in here as well! While I love a slice of this cake with hot tea, it would also be amazing with whipped cream or vanilla ice cream. Yum!

Strawberry Apple Dump Cake

This Strawberry Apple Dump Cake is like a cobbler but without all the work. It is the perfect dessert for pie lovers everywhere. It’s gluten free, nut free, egg free and easily vegan by using vegan baking sticks instead of butter and a dairy free gf flour. You can use any fruit combination that you’d like and it can serve your entire family. Top it with confectioners’ sugar, fresh fruit, whipped cream, a scoop of ice cream or all of those things (why the heck not?!) and dig in!

The kids are always excited to help me bake but this Strawberry Apple Dump Cake is so simple, they can basically make it themselves, aside from some slicing of the fruit. This recipe is wonderful because you can really use any fruit combination that you’d like and it the prep work is exactly as the cake implies: dump everything into a baking dish. Literally.

Let’s get dumping!

Ok, let’s start by chopping up our fruit. Wash, peel, core and cut up 3-4 apples into chunks. Slice the tops off the washed strawberries and cut into quarters. Congratulations. You just did the most difficult part of this entire process! Haha.

Next, let’s grease and flour our 9 X 13 inch baking pan. This basically means you’re going to rub your butter or vegan baking stick all over the inside of the baking dish and then sprinkle some gluten free flour in the dish; using a clean hand, spread the flour all around.

Now it’s time to add the fruit to our Strawberry Apple Dump Cake.

Place the apples and strawberries into the pan in a single layer. Sprinkle the granulated sugar over the fruit and drizzle the vanilla over the top. Give the pan a little gentle shake to combine.

Add the dry ingredients.

In a large bowl, whisk together the gluten free flour, sugar, baking powder, baking soda, cinnamon and salt. Are you ready for this next step? Sprinkle this mixture over top of the fruit in the baking pan. No, I am not kidding. Yes, it is that simple. Give it another gentle little shake to combine. Place the cubed butter or vegan baking stick evenly over the top and that is it!

Pop it in the oven and bake it for 45-50 minutes or until the cake is golden brown and the top springs back when carefully touched. I say carefully because I do not want you to burn your hand! Please be careful!

When it has cooled a bit, cut up into as many slices as you’re serving and top with with any of those incredible things I listed earlier.

This dessert is amazing because it is seriously so easy to prepare and tastes so so good. Gluten free, egg free, nut free, easily dairy free and amazingly delicious. Enjoy, you guys!
