Simple Sweet Potato & Green Apple Soup

Making this simple sweet potato and green apple soup is not only easy but it’s a crowd pleaser for the knee high crowd every time.

Why use Sweet Potatoes instead of butternut squash?

Butternut squash soup is an Ina Garten classic. It’s SO GOOD. But when I’m cooking for kids, sweet potatoes work better. Because:

  • Sweet potatoes are sweeter!
  • It’s easier to find sweet potatoes at the store
  • Sweet potatoes are usually more affordable
  • Kids already know (and in most cases *love*) sweet potatoes
  • You don’t have to peel sweet potatoes!

The rest of our soup is so easy, all you need is a baking sheet and a blender. Ready?

Sweet Potato & Apple Soup

Ingredients

  • 4 large sweet potatoes
  • 1/4 cup olive oil or coconut oil
  • 2 large onions
  • 2 Granny smith apples
  • 8 cups chicken or vegetable stock
  • 1 tablespoon garlic powder
  • 1 tablespoon cumin
  • Salt & pepper
  • Fresh thyme

Instructions

  1. Set oven temp to 425 degrees F. Dice sweet potatoes (unpeeled) into one-inch pieces.
  2. Place potatoes on a large baking sheet and drizzle with olive oil. Sprinkle with salt. Roast until the edges get dark, about 25-30 minutes.
  3. Meanwhile, chop onions and apples. Add to a second pan, drizzling with olive oil and add another sprinkle of salt. Roast until the apples and onions are soft on the inside, brown on the edges. About 20-25 minutes.
  4. Use a blender to combine the roasted sweet potatoes, apples and onions. (Add some of the 8 cups of stock to liquify.)
  5. In a large stock pot, combine the pureed mix to the remaining stock plus garlic powder, cumin plus 1 teaspoon of salt and 1/2 teaspoon of pepper.
  6. Cook until heated through.
  7. Serve with fresh thyme on the side, letting kids add as they like.

Sweet Potato and Apple Sausage Breakfast Skillet

This Sweet Potato and Apple Sausage Breakfast Skillet is the perfect healthy and egg-free breakfast. It is my go-to when I want to meal prep a delicious and nutritious breakfast. You are sure to love this sweet and savory combo!

What You Need:

  • Chicken Apple Sausage — My favorite Whole30 one is from Aidells, but Sam’s Club has a compliant option as well.
  • Sweet Potato
  • Green Apple — I use Granny Smith because it has some tartness to it, it’s not too sweet.
  • Onion
  • Spinach
  • Salt
  • Lemon — The pop of acidity really brings it all together.

Let’s Make Breakfast:

  1. Heat the oil in a large skillet over medium heat and brown the sliced sausage, then remove from pan.
  2. Add in the sweet potato, salt and onion and cook for about 10 minutes, stirring occasionally. You want to get a little color on the sweet potato and it should be just starting to get tender.
  3. Then add in the diced green apple and spinach. Continue to sauté until spinach is wilted and potatoes are tender. Stir in the cooked sausage and lemon juice.
  4. Taste for seasoning and serve.

This was SO good! I substituted the spinach for kale, and added half a lemon instead of a whole one. Finally, healthy can also mean tasty 😋!

So good! This is the first time trying chicken sausage and boy was it tasty. I was a little hesitant about trying this recipe because of that but I’m so glad I did. I’m on an AIP diet so this will definitely be on my rotation for breakfast meal prep.

Tried this a yr ago for a family weekend breakfast. Everyone loved it. My sister and daughter have egg allergies so this was a great option for everyone. With or without eggs it is wonderful. Was asked to bring it again this yr.. Thank you.

Hi Cheyenne, I usually just heat it up in the microwave for 30 seconds to a minute, but you can also warm it back up in a skillet

Delicious. I am not a sweet potato fan but try to incorporate them where I can because they are healthy. That being said, I love a good breakfast skillet. I did make a few alterations. My potatoes were very small so I used two, I had half of a red bell pepper that needed using so in it went with the onion, and I added some sage, thyme and rosemary. It turned out so well that I will definitely be making this again. Thanks for the recipe and the inspiration.

🍏 Мое восприятие
Ловлю искрящийся, свежий, где-то водный и цветочный флер. Вода влюбляет в себя с первых пшиков. И это водичка за 200 р?? Ноты звонкие, игривые, душистые.
Она не пропадает буквально за первые минуты. Я ее отчетливо слышу, даже когда использую на разных участках тела.
Конечно, заявленное автором яблочко притягательно и ароматно ровно настолько, чтобы не затошнило, извините.
Просто яблоневый цвет здесь окутан другими составляющими, которые постоянно соревнуются между собой. Если не заглядывать в пирамиду, то получается, что начальные грейпфрут и гардения просто прошлись по авансцене, не задержав внимание на себе и скрылись, но разве что намеком и ненавязчиво. Они просто сидят близко к коже. Самое главное я спирта не слышу. Вот здорово.

🍏 Стойкость у туалетной воды очень хорошая для такой ценовой категории.
На чистых волосах оседает на несколько часов. На одежде никогда не использую. Только на коже.

🍏 Для кого и куда?
Для себя и точка! Не думаю, что можно ставить строгие рамки в отношении этого аромата. Да, многим продукт покажется недостойным, потому что он дешевый. Однако аромат намного выше своей стоимости.

Зимой я бы точно его не стала использовать. Все же фруктово-цветочные воды идеальны для теплого времени года.
Несмотря на то, что на полочке несколько флаконов, рука тянется именно к этому экземпляру.
Наверное, и на теплой и на холодной коже проявит свою силу одинаково, но все же предпочтительнее теплая кожа.

Кстати, на просторах интернета есть похожий аромат с именем Парфюм Луи Арманд только несколько в ином дизайне и с другими нотами.

Поэтому не могу утверждать, это редизайнинг или совсем другой аромат.

Я бы не стала проявлять излишнюю категоричность и сравнивать ароматом с простым одеколоном.

Конечно, это не элит и не премиум парфюмерия, но весьма достойного качества.

Eat and Drink Seasonally, with a Sweet Potato Green Smoothie!

Gently Rolling into Fall with a Sweet Potato-Apple Green Smoothie

I’m pretty open about my green smoothie habit. Yes, after a workout, I crank up that Vita-Mix and make myself a big ol’ glass of greeny goodness, packed with more salad than I would eat at one sitting. I love it cold and frosty, with my frozen bananas and berries.

But then when a chill is in the air, a frozen breakfast starts to seem kind of wrong. Maybe It’s the fact that I have to put on another layer to drink it without getting an all-day chill, but it does seem kind of out of touch with the season. It’s also based on produce that is not really in season, either. So, to be true to my local and seasonal conscience, I’ve been baking up sweet potatoes to use in my smoothies.

Instead of bananas, which provide that creamy, almost dairy-like base for your greens, the sweet potato is a great option. Full of beta carotene and good fiber, it’s less of a sugar hit, more of a vegetable. Because it is a vegetable. So, I just throw a couple in the oven at some point in the week, usually when I am baking something else. No prob, just roast them at whatever temp you need for your bread or granola, and when they are soft and collapsing, take them out, cool, and if you have time, slip the skins off and mash. Put them in a tub and refrigerate.

Then, when it’s time for my smoothie attack, I can just lob a gob of yam in instead of a banana. That simple. And for this one, I have some delicious local apples, which I add without peeling. The peels are good for you- just buy organic and wash them well.

A couple of cups of greens, whether the last leaves of frost kissed kale from the garden or bagged greens from the store, and a few more additions, and I have yet another healthy breakfast that seems just like a treat. Win-win situation, all around!

Fall is a Great Time to Apple Up Your Smoothie!

Sweet Potato Green Smoothie for Fall

Adding the dates makes this quite sweet, you may want to try it without and see if your palate needs a little more sweetness.

2 cups baby kale or spinach
2 tablespoons almond butter
3/4 cup mashed sweet potato
1 large apple, unpeeled
1 cup almond milk, unsweetened
1 1/2 teaspoon cinnamon
4 ice cubes
4 medium dates, optional

Put all the ingredients in the blender, in order, and blend. Serve immediately.
