Step 1/6
- 360 g butter
- 500 g flour
- 1 egg yolk
- ½ tsp salt
- 120 g sugar
- 60 ml water
- stand mixer

Cut some of butter into large pieces and add to a stand mixer with most of flour, egg yolk, salt, and sugar. Beat for approx. 2 – 3 min. until crumbly. Then, slowly add water, reserving a small amount for the final step, and continue to beat for another 1 – 2 min. until dough is smooth and uniform in consistency. Wrap dough in plastic wrap and transfer to refrigerator. Allow to set for approx. 1 h.

Preheat oven to 180°C/350°F. Cut dough into two even rounds. Then, flour work surface, place dough on top, and roll out, one at a time, using a rolling pin until rounds are larger than your pie dish.

Flour both sides of dough and transfer to pie dish. Press evenly into all edges of dish and then remove excess dough. Place a piece of parchment paper on top of dish and fill with pie weights. Place in preheated oven at 180°C/350°F and blind bake for approx. 10 min.

Peel, core, and quarter apples. Then, cut crosswise into medallion-sized pieces.

In a large bowl, thoroughly mix together apple, lemon juice, cinnamon, nutmeg, flour, sugar, and brown sugar.

Transfer apple slices to pie dish and spread out evenly. Cut remainder of butter into pieces and place on top of apples. Cover pie with rest of dough. Make a small hole in the middle, so air can escape. Mix together egg white and water and brush on top. Return to oven and bake at 180°C/350°F for approx. 50 – 55 min. until golden brown. Enjoy!

What Is Apple Butter?
Contrary to its name, there is no butter involved in the making of apple butter. The fruity spread, which is essentially highly concentrated applesauce, is made by cooking apples with spices (like cinnamon and cloves) or ciders until the sugars are caramelized. This process leaves you with a thick, brown, rich, and powerfully apple-flavored spread.
Apple Butter vs. Applesauce
Since apple butter is cooked much longer than applesauce, it has a totally different consistency. The extra time over the heat makes apple butter thicker and glossier than applesauce. While applesauce is soft and mushy, apple butter has a rich, spreadable texture that’s somewhere between jam and peanut butter.
Also, the sugars in apple butter are more concentrated than applesauce. This gives the spread a longer shelf life than the sauce.
Apple Butter Uses
Use apple butter the way you’d use any fruit spread: Spread it on toast or biscuits, dollop it onto pancakes or waffles, stir it into your oatmeal, or use it to give your baked goods a burst of fruitiness. You can even use apple butter in savory recipes — brush it onto meats (such as pork, chicken, or turkey) before cooking to add delicious fall flavor.
How to Make Apple Butter
If you’ve ever made applesauce, congratulations! You know exactly how to make apple butter: Just cook cored apples with sugar and warm spices like cinnamon and allspice. The only difference? Apple butter cooks longer to achieve its brown color, rich texture, and deep flavor.

It’s believed that Monasteries kept large apple orchards and needed a way to preserve the harvest. This homely spread became a popular method of preserving apples all around the world. While apple butter typically contains more sugar than applesauce, it also has a much longer shelf life.
Some say that apple butter pie was first invented by Appalachian settlers. Back in the day, when they wanted to bake apple pie but didn’t have fresh apples available, they used what they had on hand. As you’ve probably heard it said, necessity is the mother of invention!
Is apple butter pie really that good?
As mentioned above, it’s practically shocking how much apple flavor is in this pie. Each bite is sweet, creamy, tart and apple-intense! We shared this pie with a group of taste-testers, and each gave a very passionate, positive response. From the flaky, buttery crust, to the moan-worthy filling, this pie gets 5-stars across the board. Knowing how easy and fool-proof it is to make, there are a few folks making this apple butter pie for Thanksgiving instead of pumpkin!
Can I make apple butter pie ahead of time?
This pie is easily made ahead a day or two and refrigerated until needed. Remove the pie from the refrigerator an hour before serving for the best results. Since it’s a sweet pie you don’t need to add anything like ice cream on top. Lightly sweetened whipped cream is a nice add-on, but not necessary. I just love whipped cream myself; what can I say?
Does this apple butter pie freeze well?
Absolutely! After you bake this apple butter pie allow it to cool completely at room temperature. Place the entire cooled pie directly in the freezer for a few hours. Once slightly frozen, cover the pie in plastic wrap and seal in an airtight container, or foil. The day before you need the pie, remove the wrapping and allow the pie to thaw overnight in the refrigerator. We’ve even frozen individual slices of this pie with great success. Can you make Apple Butter Pie with store-bought apple butter?
You can make this lovely little pie with homemade, store-bought, farmers market or even gifted apple butter! You’ll need two cups of highly spiced, dark, thick apple butter that is sweetened with some kind of sugar. I recently made 4 cups of homemade slow-cooker apple butter after an apple picking adventure at Carter Mountain Orchard in Virginia. I need to fine tune the recipe before sharing here, but was thrilled with the thick consistency and rich flavor. The ingredients are simple: apple cider, spices, sugar and plenty of fresh picked apples. After ten hours in the slow cooker, we had luscious, flavorful apple butter . Want the recipe?
If using store-bought, I recommend something like Musselman’s Apple Butter made with apples, sugar and spices and NO high fructose corn syrup. If you have a farmers market nearby, you can probably snag a jar or two of home-canned apple butter during the fall. I do not recommend making this pie with apple sauce.
Can you use store-bought pie crust?
I always recommend using our Perfect Pie Crust made in 3-easy steps. But if you’re not into rolling out the dough, you’re welcome to use a pre-made frozen or refrigerated crust for this pie. If you have a little leftover pastry, use it to cut out an apple design crust cookie for garnish so your guests will know it’s not a pumpkin pie.
This recipe makes enough filling for a very full pie so you’ll need a 9-inch deep dish crust. If you can’t fit all the filling into the pie pan, no worries. Simply coat a ramekin or mini-casserole lightly with cooking spray and pour any extra filling into the prepared pan. Bake along with the pie and remove when the center is set. Taste-testing is very important so enjoy!

It’s hard to find any apple butter, let alone good apple butter in the grocery store these days. Making apple butter is a great way to preserve the fruits of an apple harvest.
What is Apple Butter?
Apple butter is made by slowly cooking pureed apples for over an hour. The sugars in the apples caramelize as the puree cooks, giving the apple butter its rich, sweet flavor and dark color.
In contrast to what the name implies, there is no «butter» in apple butter. The name comes from its smooth and buttery texture. Apple butter is delicious on buttered toast.
Don’t Throw Away Your Apple Cores!
Although apple butter takes time to make, the upfront part is easy. You do not have to peel or core the apples.
The pectin for firming up the resulting apple butter resides mostly in the cores and there is a lot of flavor in the apple peels. After the first cooking, these parts get discarded as the pulp is run through a food mill.
This recipe produces a traditional apple butter, which is both sweet and sour, the addition of cider vinegar just intensifying the flavor and giving it its tangy edge. It’s seasoned with cinnamon, cloves, allspice and lemon.

The Difference Between Applesauce and Apple Butter
Apple butter is a smoother, more concentrated form of applesauce. The methods for making the two both start out similarly, by slow-cooking apples until they’re soft and mushy. Applesauce will be ready at this saucy stage, sometimes with the addition of sugar and/or spices to flavor it. But to make apple butter, you puree the stewed apples and cook them down further so more liquid evaporates and the apples caramelize.
Alternatives to Stovetop Cooking
Don’t love standing at the stove stirring for ages? These two methods are way more hands-off.
- Microwave: Instead of cooking the seasoned puree on the stovetop in Step 5, cook it uncovered in a microwave, on medium heat setting to simmer, for around 30 minutes. If you do this, monitor the cooking every 5 or 10 minutes. Microwaves vary in their power.
- Slow cooker: In Step 5, transfer the seasoned puree to a slow cooker. Cook on low with the lid ajar (lay spoons across the cooker and set the lid on top) so steam can escape. Stir once every hour or so. Depending on your cooker, it could take up to 5 hours for the apple butter to cook down.
The Best Apples for Apple Butter
Look to softer apples, like Gravenstein, to make apple butter, as they will cook down faster. We also like the tart flavor of Granny Smith apples. Combine different apples to match your taste preferences. We recommend the following varieties:
- Braeburn
- Cortland
- Fuji
- McIntosh
- Golden Delicious
- Jonagold

Swaps and Suggestions for Homemade Apple Butter
- Switch up the spices. This recipe calls for cinnamon, allspice, cloves, and some lemon to bring out the flavor, but feel free to play around with others spices such as ginger and nutmeg if you wish.

To Can or Not to Can?
Want to make larger batches of apple butter so you can have jars on hand for later and not worry about refrigerating them? Planning to give jars as gifts? If so, sterilize glass jars for canning. We offer detailed directions for water bath canning in the recipe below.
If you want to eat your apple butter up quickly, skip the canning. It keeps in the fridge for weeks as long as you’re not dipping dirty spoon into it. Or freeze it for later.
NOTE: For this recipe to be safe for canning, the sugar levels should not be reduced lower than to 1/3 cup sugar per 1 cup apple pulp.
Storing and Freezing Apple Butter
- Fresh apple butter will keep in the fridge for at least couple of weeks, if not longer.
- Sealed, canned jars of apple butter will keep for years in the pantry (they’re best used within a year, though). Once opened, they’ll also keep for weeks in the refrigerator.
- Frozen apple butter will keep up to a year.

Whether you spread it on toast, swirl it into oatmeal, or serve it on a cheese plate, you’ll find a plethora of delicious ways to incorporate apple butter.
